Garlicky Buffalo Chicken Bacon Tacos
These little spicy, garlic chicken bites are sure to be the star in these tacos, or even as bites, for game day! Soaked in buttermilk and double dredged gives the perfect crisp you need!! 10 cloves of garlic are in this dish, be prepared!! Psssst, if you have leftover buttermilk, this is the perfect recipe to use it up!
Here's how I made them!
2 large chicken breast
2 c buttermilk
1 tsp pink Himalayan salt (or regular sea salt)
4 tsp garlic powder
1 tsp garlic pepper
10 garlic cloves minced
1 stick of butter
1 1/4 c Franks Red Hot
2 Tbs cornstarch
1 1/2 c flour
Vegetable oil for frying
6 slices of bacon
fresh tomatoes chopped
blue cheese crumbles
red onion slices
First get your chicken cut up into 1/2 inch pieces. Place in a bowl.
Pour over 1/2 c of buttermilk, 2 tsp garlic powder, himalayan salt and garlic pepper, mix and let sit at room temperature for half an hour - 45 minutes.
In a 9 inch cake pan or a regular dish, whatever you prefer, add in your flour and remaining 2 tsp of garlic powder and place the remaining buttermilk in a bowl.
Once ready to dredge, melt your stick of butter over medium-low heat, add in the fresh minced garlic and let cook for about 5 minutes.
Add in the Franks Red Hot and cornstarch, mix, once a slow boiling appears set heat on low.
Now for the chicken, in batches of 10 bites, drop into the flour mixture, roll around, dunk into buttermilk and then back into the flour mixture and set on a plate. Repeat until finished, this takes a bit of time and SURE IS MESSY!
Once all of your chicken is coated, pour an inch of vegetable oil in a frying pan and heat through on medium heat.
As that heats up, check on your hot sauce, should be slightly thickened, then start cooking your bacon.
Fry your chicken in batches of 10, otherwise if too much is in the pan the frying will not be great. The breading will soak up the oil rather than crisping.
When golden brown about 5 minutes each side, drain on a paper towel and repeat until all the chicken is done.
Place all of the chicken in a bowl, pour over your hot sauce mixture and combine.
Place on a warm soft flour tortilla, top with crushed bacon, tomatoes, chives, red onion, blue cheese and whatever else tickles your fancy!
Or just pop them in your mouth, forget the taco.
