Pasta is an all time favorite, especially topped with fresh mozzarella and basil. But what's different about this dish is that it's GLUTEN FREE!! Packed with spices from the Chipotle Chicken Sausage. Deinfately give this one a try, it only takes 30 minutes to make. A quick dinner that's high in flavor and low on calories.
Here's how I made it!
½ pound gluten-free pasta (I used Calamaro Shaped)
2 Tbs Olive Oil
1 package of Johnsonville Chipotle Chicken Sausage (4 links)
1 large shallot sliced thin
4 cloves of garlic minced
salt and pepper to taste
1 (15 oz) can of organic crushed tomatoes
Fresh Belgioioso Mozzarella
Handful of fresh Basil leaves, whole
Note* Johnsonville Chicken Sausage is Gluten Free. All of Belgioioso’s cheeses are Gluten Free.
Preheat oven to 375 degrees
Over medium heat, splash in some olive oil and links, start browning on all sides, although the links are already cooked they taste much better browned. This takes about 7 minutes
While that is browning, cut up your shallot and garlic.
When the chicken sausage is done, take out and let rest, and throw in the shallots and garlic into the same pan to brown, about 5 minutes.
Cut your sausage links on a diagonal and throw back into the pan with the shallots and garlic, keep cooking until the sausage starts to brown more, about another 5 minutes.
Meanwhile, get your water boiling and cook the pasta.
When the chicken sausage is browned, reduce heat to medium-low and pour the can of crushed tomatoes overtop and let heat through, about 3 minutes.
Pour your drained pasta in a baking dish, layer a few slices of fresh mozz overtop, then pour over your chicken sausage mixture.
Top with fresh mozzarella and bake for 10 minutes.
When done, it will be bubbly and cheese will be gooey and melty! Top with fresh basil leaves and enjoy!
