Easy Personal Pizzas, with Homemade Garlicky Pizza Sauce
Peronal pizzas are always something to love, you don't have to share it, why wouldn't you love that?! I am a huge pizza freak. Only takes a few quality ingredients to make the perfect pizza. Starting and ending with the pizza sauce. If you have a certain kind of canned pizza sauce you love, that's totally fine, we can keep that a secret. But if you are looking for a sauce to make I have the perfect recipe for you!
Here's how I made them!
Splash of olive oil
7 garlic cloves, minced
1 (28 oz) can whole peeled tomatoes
1 (15 oz) can of crushed tomatoes
1 Tbs brown sugar
1 tsp salt
½ tsp ground black pepper
¼ tsp red pepper flakes
5 Tbs grated parmesan cheese
Hand full of fresh chopped basil
1 tsp dried oregano
1 c warm water
1 packet of active dry yeast (2 ½ tsp)
1 Tbs sugar
2 Tbs olive oil
Pinch of salt
3 c flour
Fresh basil leaves
Starting off with the sauce, because it takes 4 hours of simmering. Over medium heat splash in the olive oil and minced garlic. Cook until fragrant.
Add in the canned tomatoes and bring to a slow boil (medium heat)
Once boiling, add in brown sugar, salt, pepper and red pepper flakes.
Stir and let slow boil for 30 minutes, lid on.
After 30 minutes lower the heat to medium low, we want small bubbles not a harsh boil, cover and let simmer for 3-4 hours. Stirring every 15 minutes.
While you continue to stir every 15 minutes break up the whole tomatoes with a wooden spoon, you can leave them whole or have them chunky. I love chunky pizza sauce so I broke them up a bit. From testing with different canned tomatoes, whole just has a better taste in the end but crushed has more of a thicker juice so combining the two just made sense!
When you are down to your last hour of the pizza sauce simmering, add in the parmesan cheese, basil and oregano.
Now time to start on your dough.
In a stand mixer with a dough hook attachment, combine yeast, sugar and warm water and let sit for 7 minutes.
Splash in the olive oil and your salt, mix and then slowly add in your flour.
When combined and shaped into a smooth ball, drizzle a little olive oil over the dough, making sure it is coated all over, cover the bowl with plastic wrap and let rise for about an hour.
Just as you are done with that hour, preheat the oven to 375 degrees
When the dough is ready, take out and cut into 5 equal portions. Form into circles or whatever shape you desire.
Blind bake for 8 minutes, (this will help jump start the cooking of the crust so it comes out crispy instead of soft) take out and pour about ½ c – ¾ c of sauce on each crust, top with fresh mozzarella and finish baking until crust is golden and cheese has melted, about 10 minutes.
Top each pizza with fresh basil leaves and enjoy!
