Skinny Mini Buffalo Cauliflower Bites

As you know, buffalo anything, is my hero. Buffalo chicken is a huge go to for football food, but what about those who are vegetarian? Here is your answer!! Buffalo Cauliflower. It looks and tastes better in my opinion! Super low in calories and light. They're absolutely delicious and also budget friendly. These baby's are absolutely wonderful!

 

 

Here's how I made these!

 

 

Ingredients:

½ head of large cauliflower or 1 small head, cut into florets

4 Tbs vegetable oil

Salt and Pepper

1 Tbs garlic powder

1 c of whole wheat flour or white flour

1 c Franks Red Hot (or your favorite hot sauce)

Lowfat ranch or blue cheese

 

Directions:

  1. Preheat oven to 450 degrees, make sure the rack is at the upper 1/3 of your oven. Helps get the cauliflower crispy.

  2. Cut your cauliflower into florets, about the size of chicken bites, placing them in a large bowl.

  3. When they are all cut, add to the bowl, the oil, pinch of salt, few cracks of black pepper and garlic powder. Toss until completely coated; if you need a little bit more oil just add in a little. Every floret needs to be covered.

  4. Add ½ c flour to a large zip block baggie. Add your cauliflower bites to the baggie and shake to coat every piece, if you need to add a bit more flour then do so, you don’t want any extra.

  5. Place the bites on a baking sheet, spreading out the cauliflower evenly and bake for 15-20 minutes.

  6. Halfway through, check on them, flipping them over and around with a spatula. If you want really crispy cauliflower then keep them in longer, this takes a bit of time.

  7. When they are to your liking, take them out, place them back in the bowl you did your mixing in and add your hot sauce.

  8. Coat all pieces of cauliflower. A little extra hot sauce won’t hurt!

  9. Place them back on the baking sheet and bake another 10-15 minutes until they are crispy and smell like heaven!

  10. Serve with fat free ranch or blue cheese. ENJOY MY FRIENDS!
