Perfect Garlic Pizza
This Pizza is amazing, beyond belief. A simple crust, topped wish crushed garlic oil, fresh mozzarella, slices of beefsteak tomato and red onion. Baked to a perfection. Then sprinkled with fresh basil. The key ingredient is the garlic oil. I crush a few cloves of garlic and let it simmer in olive oil. It really packs the punch in this pizza. This is such a crowd pleaser!
Here's how I made perfection...
1 packet dry active yeast (2 ½ tsp)
2 tsp sugar
1 c warm water
3 Tbs olive oil
Pinch of salt
3 c all-purpose flour
¼ c good olive oil
7 garlic cloves smashed
1 Tbs butter
1 large beefsteak tomato
A block of fresh mozzarella (about 10 thick slices)
½ a large red onion, sliced thin into rings
Handful of fresh basil leaves torn
Combine the yeast, sugar and warm water and let sit for 10 minutes.
Add in 3 Tbs olive oil, salt and flour, knead with a dough hook for about 10 minutes until smooth and taking shape of a ball.
Cover with a little olive oil and plastic wrap, let rise for 1 hour.
As that rises, combine ¼ c olive oil, garlic (smashed with a knife) and butter in a small saucepan, over low heat. Let warm over low heat until you’re ready to assemble the pizza, stirring occasionally.
Once dough has risen, preheat oven to 350 degrees.
Dump pizza dough onto a large greased sheet pan, form to desired thickness (mine was ½ inch)
Pour on your garlic oil, spreading out the chunks of garlic evenly over the pizza.
Bake for 10 minutes before adding anything else. This helps get the pizza crispy without over-cooking the cheese.
Take out of oven, top with fresh mozzarella, tomato and then the onions last.
Throw back into the oven for about 15 minutes, until cheese has started to brown around the edges.
Crack the oven door once you’ve reached this point and turn on the broiler for 3 minutes to brown the cheese in the center.
Take out, top with fresh basil and serve! ENJOY!!!
