All time favorite right here. Such a fan for dry, crumbly, short-bread-like cookies. Especially covered in powdered sugar! When I was little I would eat these during the holidays, picking through the holiday cookie trays to get to these sweet treats. They're fairly simple to make, using only a few simple ingredients! You don't have to worry about over baking them either! Phew! Definitely try these out for the holidays.
Here's how I made them!
1 c butter, softened
2/3 c powdered sugar
1/4 tsp salt
2 tsp vanilla extract
3 Tbsp cornstarch
Small pinch of nutmeg (optional)
2 cs all-purpose flour
1/2 cup very finely chopped Pecans
Powdered sugar for coating
Preheat oven to 350 degrees
Beat the butter until creamy.
Add in the powdered sugar, salt, vanilla and nutmeg, beating until fluffy, about 3 minutes.
Sprinkle in the cornstarch and 1 c of the flour and mix on low, then gradually add in the remaining cup and mix until JUST combined.
Stir in the finely chopped pecans and begin forming!
Using a Tablespoon measurer, drop each ball out and roll into a smooth, tight ball.
Place on a large baking sheet lined with parchment paper. The cookies can be close to eachother, they barley spread out.
Bake for 15-17 minutes until just golden on the bottoms.
Cool for 10 minutes then drop each bacll into powdered sugar and press gently to get a thick coating.
Let cool completely and ENJOY!
Servings: About 35 cookies (more or less depending on how big you roll cookies)
