Christmas Snowball Cookies

All time favorite right here. Such a fan for dry, crumbly, short-bread-like cookies. Especially covered in powdered sugar! When I was little I would eat these during the holidays, picking through the holiday cookie trays to get to these sweet treats. They're fairly simple to make, using only a few simple ingredients! You don't have to worry about over baking them either! Phew! Definitely try these out for the holidays. 

 

 

Here's how I made them!

 

Ingredients:

1 c butter, softened

2/3 c powdered sugar

1/4 tsp salt

2 tsp vanilla extract

3 Tbsp cornstarch

Small pinch of nutmeg (optional)

2 cs all-purpose flour

1/2 cup very finely chopped Pecans

Powdered sugar for coating

 

Directions:

  • Preheat oven to 350 degrees

  • Beat the butter until creamy. 

  • Add in the powdered sugar, salt, vanilla and nutmeg, beating until fluffy, about 3 minutes.

  • Sprinkle in the cornstarch and 1 c of the flour and mix on low, then gradually add in the remaining cup and mix until JUST combined. 

  • Stir in the finely chopped pecans and begin forming!

  • Using a Tablespoon measurer, drop each ball out and roll into a smooth, tight ball. 

  • Place on a large baking sheet lined with parchment paper. The cookies can be close to eachother, they barley spread out. 

  • Bake for 15-17 minutes until just golden on the bottoms. 

  • Cool for 10 minutes then drop each bacll into powdered sugar and press gently to get a thick coating. 

  • Let cool completely and ENJOY!

 

Servings: About 35 cookies (more or less depending on how big you roll cookies)

Cook time: 16 minutes
