Garlic and Chive Bagels (45 minute rise time)

Happy New Year!! These Bagles are light and beautiful. Small chunks of garlic running throughout and little specks of chives. I wanted to create a recipe where the rise time didn't have to be as long, normally an hour and a half to two. This is only a 45 minute rise which helps on time if you're cutting it close. No one can turn these bagels down, they're that good. Especially for my garlic lovers out there! 

 

 

Here's how I made them.

 

Ingredients: 

1 packet active dry yeast (2 1/4 tsp)

2 tsp sugar

1 1/3 c very warm water (microwaved for 45 seconds)

10 garlic cloves minced

2 Tbs fresh chives chopped or dried

3 1/2 c bread flour

pinch of garlic salt (or kosher)

 

Toppings:

garlic salt

minced onion

poppy seed

sesame seed

 

Directions:

  1. In a stand mixer with dough hook, or large bowl, mix together the yeast, sugar and warm water. Let stand for 10 minutes. 

  2. Mix in the flour, garlic, chives and salt, on low speed for 5 minutes until well combined and smooth. If you do not have a stand mixer, hand knead for 10-15 minutes until smooth.

  3. Cover with a little bit of olive oil and plastic wrap and let rise for 45 minutes.

  4. When ready, preheat oven to 375 degrees and boil a large pot of water on stove.

  5. Cut your dough intwo 8 equal pieces, poke your finger through the middle, stretch about 1 1/2 inches - 2 inches and lay on parchment paper. When all 8 are formed you are ready to start the pre-cooking process.

  6. Boil 4 bagels at a time, 1 minute on each side, take out, place on parchment lined baking pan and immediately sprinkle toppings. I used a variety. 

  7. Repeat the process with the remaninig 4 bagel. 

  8. Bake for 15-20 minutes until lightly golden brown on top.

  9. ENJOY!!! Best served immediately. 

 

Servings: 8 Bagels

Cook time: 20 minutes
