Surf and Turf

Let me begin with, I've never made seafood before, until NOW! Anddddd HAPPY VALENTINES DAY! This is sure to win over your valentine...not just on Valentine's day but any night of the week! What makes this elegant dinner is the Garlic Herbed Butter that melts into the steak and lobster!

 And of course, how fresh your ingredients are! Otherwise, your're wasting your money. Fresh is best and always comes out amazing in the end.

 Now, I just want to give a little advice. If you are grilling inside...don't even think about putting any type of sugar on this steak as a seasoning. For a steak like this, you want a nice crispy sear and if sugar is on your steak..the extremely high heat with cause a LOT of smoke, do the grilling outside. YEAH I found out the hard way but.....the steak came out amazing. Just...I couldn't see in my house! ha ha

 So, for my first time cooking lobster, or...seafood in general, it turned out fabulous. It's all about the TLC baby. 

 

 

Ingredients:

  • 1 pound (or a bit more) Ribeye bone-out (Got mine at Wegmans, it was great!)

  • 2 Lobster tails

  • Salt and Pepper

  • Olive Oil

  • Herbed Butter*

 

Directions:

  1. First if you don’t have Herbed Butter, go ahead and combine the ingredients…see below for ingredients!

  2. Take out steak, season with a good amount of salt and pepper and olive oil. Let sit to come to room temperature.

  3. Take your two lobster tails and split right down the middle, coat with a little olive oil and salt and pepper.

  4. Now, using a grill or griddler on the stove, heat over high. You want the pan or grill to be super hot to get those great grill marks.

  5. When ready throw on your steak. Cook about 6-9 minutes per side. (Mine looks a bit dark because I used a bit of brown sugar. The sugar makes a great chary-crust…definitely do not go that route unless you are grilling outside. The high heat and sugar just makes a load of smoke! I learned the hard way! I make mistakes too! Heehee)

  6. Just as soon as your steak is almost done cooking on the second side, throw on your lobster, flesh side down and cook for 3 minutes, until you start to see red appear. Then flip over on the other side and top with a heaping Tablespoon of the herbed butter, cook for another 2 minutes and your steak and lobster are ready!

  7. Let the steak rest, please! For at least 15 minutes. It holds in all the juiciness this way. And top with a heaping Tablespoon or 5 of the herbed butter!

  8. Cut against the grain when ready to serve and enjoy my surf and turf-ing friends!

*Herbed Butter (Combine all into a small bowl and refrigerate)

2 sticks softened butter (I used 2 because it’s great to use with other dinners. Always should have this on hand!)

½ large shallot, or one small, minced

3 large garlic cloves minced

2 Tbs freshly minced parsley

½ tsp salt

¼ tsp red pepper flakes

¼ tsp fresh cracked black pepper

½ tsp lemon zest
