Bird's Nest Breakfast

 Wakey Wakey! Here's a breakfast that will surely fuel you throughout your morning! Few simple ingredients thrown together to make a complete breakfast.

 Look at that layered goodness...

"Corned Beef and Potato Breakfast Casserole"

Those eggs, THOSE EGGS are just eye catching! So I totally had to give this a try!

I made three little holes I guess you can say..so that the egg would sit in the chipped beef. I wanted them to stay put. 

 How divine does THAT look!? Surely a breakfast that I will make plenty of times in my future. Have a wonderful morning!

 Oh,. and don't forget the handful of bacon!

 

Ingredients:

  • 6 small russet potatoes washed, dried and diced into medium pieces.

  • Olive oil

  • Salt and Pepper

  • 2 medium onions sliced

  • 1 Tbs minced garlic

  • 3 slices of swiss cheese

  • 3 slices provolone cheese

  • 2 c (about 6 ounces) dried beef, cut or tear into rough pieces

  • 3 medium eggs

  • Chives for garnish

 

Directions:

  1. Over medium heat in a skillet pour in about 2 Tbs olive oil and potatoes. Cook until browned about 20-25 minutes.

  2. Halfway through the potatoes cooking, in a smaller skillet over medium low heat, pour in 1 tsp olive oil and onions. Cook until translucent and then add in minced garlic and cook for another 5 minutes.

  3. Preheat the oven to 375 degrees

  4. In a 9x9 dish pour in the cooked crispy potatoes.

  5. Top with the cheeses, then the onions/garlic.

  6. Then top with the chipped dried beef.

  7. Make three small wells, pushing the beef aside to place your eggs in so they don’t spread across.

  8. Bake for 15 minutes or until your eggs are done. You want them to be runny so make sure to keep an eye on them!

  9. Let cool for 5 minutes, top with chives and serve and ENJOY!!
