Chicken, Bacon & Avocado Pasta
This is probably one of the best pasta dishes I've made so far, simply because it's DIFFERENT!. It's not your every-day that you see avocado on your pasta! But boy, what a game changer! It adds great color to the dish along with a nice refreshing background and the saltiness from the crisp bacon. This is just overall, a great pasta dish. AND gluten free!

Gluten Free Pasta. If you're not a fan, switch it out. In my personal opionion. I think it's much better than regular pasta. HOENSTLY, you can't even tell the difference!
If you love a Turkey/Chicken and Avocado sandwich, i'm telling you...you'll love this pasta dish. And Bacon...it's just great on anything!! Who doesn't love a nice bite of crispy, salty bacon?
1 box of gluten free pasta of your choice
2 small ripe avocados
4 large garlic cloves
big squeeze of fresh lemon juice
few sprigs of fresh parsley
1/2 tsp black pepper
1/2 tsp salt (depending on your taste, add a little in and taste to see)
1/4 tsp red pepper flakes
About 6 chicken tenders cooked, seasoned with salt, pepper and garlic powder
4 slices of bacon cooked til crispy
Get your water boiling for the pasta, as that goes, in a food processor combine avocado, garlic, lemon juice, parsley, pepper, salt and red pepper flakes and blend until smooth. Taste and adjust seasonings if necessary
Let sit as you prepare the rest.
Chicken tenders are easy to cook, if you have leftovers just reheat in a skillet, if not, just season with salt and pepper and cook until browned on each side. They don't take long to cook.
When water is boiling add some olive oil in and your pasta. Cook accordingly.
As that cooks either in the oven or over the stove in a skillet cook your bacon. I like to use the oven, using a small baking sheet covered with foil. It helps with an easy clean up.
So now you have all of your ingredients ready to go.
Place down your past in a bowl, spoon over your avocado mix, then chicken, then bacon and garnish with some parsley if you want!
