Chocolate Souffle

 HAPPY NATIONAL CHOCOLATE SOUFFLE DAY!!!!!!!!

A chocoalte lovers dream come true....a holiday about chocolate, aside from Valentines Day. Souffle is rich and decadant...and just oh so dreamy.

 Of course I added chocoalte ganache... Molten Lava Cake meets Chocolate Souffle...Lava Souffle! 

 Othewise this is what they would look like. The height on that...is just a beautiful view. I was extremely nervous when making these, being my first time. The height is crucial! And easy to mess up! The key is to make sure everything you are using, is super clean, espcially when working with the egg whites.

 OK...i'll stop with the torture..here's the recipe!

 

Ingredients:

  • 8 oz (about a cup and ¼) of really good semi sweet chocolate (I used Ghiradelli)

  • 3 egg yolks

  • 1 tsp vanilla

  • ¼ c hot water (or warm flavored liqueur, such as raspberry or orange)

  • 4 egg whites

  • ¼ c white sugar

  • ½ c additional of semi sweet chips

  • ¼ c heavy cream

 

Directions:

  1. Preheat oven to 400 degrees

  2. Over a double boiler, melt 8oz semi sweet chocolate chips.

  3. When melted, set aside and cool for a minute before adding in the yolks.

  4. Add in the yolks and mix to combine. (NOTE – Mine got super thick and looks pretty grainy…so I added the hot ¼ c of water to loosen it up. If using liqueur, make sure it is very very warm)

  5. Once the mixture becomes smooth and silky. Set aside.

  6. In a stand mixer or using a hand mixer, beat the egg whites on super high, slowly add in the sugar.

  7. These are done when they are still glossy and when you pull out the beaters slowly…the peak will hold, not flopping over.

  8. Fold the egg whites into the chocolate mixture until well combined.

  9. Butter 4 ramekins and dust with sugar, placing on a baking sheet.

  10. Pour the chocolate batter into each ramekin, pretty much filling them. This batter fills 4 equally.

  11. Bake until tall and somewhat firm. Just as the edges are turning darker, take out and let sit.

  12. Microwave your heavy cream until hot, about 1 minute.

  13. Add in the addition ½ c chips and let sit for a minute. Mix until smooth.

  14. Take a spoon and dive into one of the soufflés making a nest and drizzle in your chocolate ganache.

  15. Serve immediately and enjoy every spoonful!!! Pure indulgence.
