The Ultimate, Loaded Fries

Oh no, these aren't just ANY loaded fries, these are, Brown Sugar-Coated Bacon, LOADED Fries. This bacon is where it's at. Seriously. Gives this app a whole new dimension!

What about now...? Oh yes you are. This came to me beacuse we were having steak one night and I was thinking of a side...and I saw potatoes...and bacon...and I didn't want to just do a loaded baked potato so I went and threw this together. And damn was it good.

Just forget the diet for a second...

My mind is telling me noooooo but my bodayyy my bodayyyyy is telling me YES!


  • 4 large red potatoes (or russet)

  • Olive oil to coat

  • Salt, Pepper & Garlic Powder to season

  • Provolone Cheese

  • Parmesan Cheese

  • Mozzarella Cheese

  • 6 slices of bacon

  • 1 Tbs Brown Sugar

  • Chives


  1. Preheat the oven to 425 degrees

  2. Cut up your potatoes into “fry shape” Coat with olive oil and season to your liking.

  3. Bake on a baking sheet lined with parchment paper (I find parchment is the best because with foil the fries tend to stick, this also aids in an easy clean up!)

  4. Bake the fries for about 40 minutes, flipping them about 4 times throughout.

  5. Just before the fries are baked fully, cover a baking sheet with foil, then place on your bacon.

  6. Sprinkle over the brown sugar only on one side and bake to a crisp.

  7. When both of these are done pull them out.

  8. Take your fries, keeping on the same pan, and make a small pile with half the fries.

  9. Cover with the amount of cheese you want.

  10. Cut up the bacon and then put half on.

  11. Cover with remaining fries, cheese and bacon, and bake at 400, until cheese has melted (about 10 minutes)

  12. Take out, dollop with some sour cream and sprinkle over minced chives.

  13. Enjoy!! This one is soooo good.
