I had no other word for this but Fiesta because it is SO colorful and eye-catching! And not to mention.....Healthier Pizza.
And for a time crunch, this pizza is perfect! Using pre-made pizza dough. I know i know, coming from me? Yes! I'm a cheater sometimes! But that's totally ok! :)
I'm tellin ya. If you're an avocado lover, this is SO your pizza! Some cheese yeah..some ranch yeah...but mainly veggies cover this pizza! Perfect for the spring time coming up to serve up to your friends!
This would even be perfect for St. Patty's Day!!
1 can of Pillsbury Thin Crust Pizza Dough
3 Garlic Cloves minced
Mexican Blend Cheese (shredded)
Mozzarella Cheese (shredded)
3 oz of Prosciutto roughly chopped (about 6 slices)
1 small Red Onion chopped
1 Beefsteak Tomato chopped
2 Avocados chopped
4 Green Onions finely sliced
Preheat oven to 400 degrees, or what the Pillsbury instructions say.
Roll out your dough on a large oiled baking sheet. Poke holes in the dough with a fork, drizzle a little more olive oil over top and rub all over to coat evenly.
Bake for 5-8 minutes until slightly browned.
Take out the dough, flip so that the browned top is now on the bottom to make a nice crispy crust.
Cover with the Mexican Blend Cheese and then in little piles, place on the mozzarella. The piles of mozzarella, when melted just come out prettier, rather than spreading all over the crust. Then top the cheese with the minced garlic, sprinkling evenly over the pizza.
Top the pizza with the Prosciutto and bake for 5-8 minutes. Towards the end if the Prosciutto hasn’t browned yet, turn on the broiler and cook for a minute.
Take the pizza out of the oven and let cool for a few minutes.
Drizzle over the ranch, then top with red onion, tomato and avocados. Drizzle ranch again and sprinkle with green onions.
Cut and serve immediately, Enjoy!!
