Spring is only around the corner…..and then…SUMMER…….Must….Eat….Salad…..
This salad is full of colors! Super bright and delicious. I’m not a huge, huge fan of veggies…especially putting them on my salad so I went right for the fruit.
You’ll feel wonderful after eating this salad..seriously. So good for you. I’m literally eating this salad, again, as I write about it. It’s THAT good.
Big handful of spring mix
¼ c shredded carrot
¼ c shredded red cabbage
Cooked Chicken (I used tenders that were seasoned with salt, pepper, garlic powder and Italian seasoning)
1 Granny Smith Apple, sliced thin
1 Shallot sliced thin
Handful of Strawberries sliced thin
Handful of whole Walnuts
2 Tbs fresh chopped chives
2 Tbs crumbled Gorgonzola
First cook your chicken if you have not yet. Nothing extravagant.
On a plate lay down the handful of spring mix, sprinkle over the carrot and cabbage.
Next sprinkle over the thinly sliced shallots breaking them up into rings as you go.
Slice up the Granny Smith Apple super thin. I like to cut off all around the corn, 4 cuts, then slice each ¼ as thin as I can. Lay that over the salad.
Place on your chicken, whole or cut up, whichever you’d prefer.
Then crumble over the whole walnuts, I just crunched them in my hand as I sprinkled.
Cut up your strawberries next and lay those over the salad (I like to keep these towards the end so they don’t get covered by the rest of the salad, the red is so pretty)
Then crumble over the gorgonzola.
Now drizzle over the dressing…you don’t have to use my recipe. A simple balsamic vinaigrette will be just perfect, but if you are using mine..just combine all ingredients in a plastic container with a secure lid and shake it like you’ve never shaken it before!!!! And pour immediately.
