So after dinner Billy goes "Hey, can you make banana bread?" I immediatley go into EatLoveGarlic Mode. What I mean by that is, I mean.....I try to think of a recipe that would be great on my blog and then, I GOT IT, I replied, "Donuts?" He nodded and laughed.

It's always the "ok one last photo and i'm done" after taking about 60. But it's always the last photo that I love the most, which is above. I could drool over that picture, in fact....(wipes mouth)

Did I mention they are healthy?

  • 1 c whole wheat flour

  • 1 tsp baking powder

  • pinch of salt

  • 1/4 c lightly packed light brown sugar

  • pinch of nutmeg

  • 1/2 tsp cinnamon

  • 2 bananas mashed roughly or finely, depeding on how you want the donut texture to be.

  • 1/2 c oikos non fat greek yogurt - 1 cap full of distilled vinegar (apple vinegar would be a nice sub)

  • 1/4 c almond milk or whatever kind you have on hand

  • 2 Tbs maple syrup

  • 1 Tbs vanilla extract

  • 1 egg

Glaze (optional)

  • 3 Tbs butter

  • 3 Tbs brown sugar

  • 1 Tbs maple syrup

  • 1 tsp vanilla

  • finely chopped walnuts, about 2 Tbs

  • 1 Tbs instant oats

  1. Preheat oven to 325 degrees

  2. In a medium bowl, combine the dry ingredients - flour, baking powder, salt, brown sugar and spices.

  3. In a small bowl combine the mashed banana, yogurt, vinegar, almond milk, syrup, vanilla and egg.

  4. Pour the wet into the dry and whisk until just combined - you don't want to overbeat the batter.

  5. Grab two donut pants (this makes 10) and spray with baking spray.

  6. Fill each donut liner almost to the top leaving just a little bit of room and bake for about 7-10 minutes, until lightly browned and comes out clean with a toothpick.

  7. While they bake start your glaze - over medium heat in a saute pan, combine the butter, brown sugar, syrup and vanilla. Continue stirring until you start to see bubbles.

  8. Once the bubbles form take off the heat immediately, you don't want to burn the glaze. Let cool a bit before frosting your donuts.

  9. Just before you are ready to frost add in the instant oats.

  10. Pour about 1 Tbs over each donut and let ooze over the sides, sprinkling with chopped walnuts immediately.

  11. ENJOY!!!!!!! sticky fingers!
