Thai Chicken Salad with Spicy Peanut Sauce

 This salad......has to be.......the most.......hunger satisfying salad. Gotta be the peanut butter. You know my love for peanut butter....and to dress a salad with it, YES!

 This salad is super simple to make! You don't have to use chicken if you don't want to, for my vegetarians out there. The dressing is what makes this salad, along with the broccoli sprouts!

 Oh, and dont forget about the lime! That's another pow of flavor. This dish brings, sweet, salty, sour, spicy, creamy, and earthy all in one that's why I love this kind of salad. The base to this salad is a cabbage slaw which fits perfectly. A nice crunch in every bite. 

 I even used the pre-shredded cabbage...this dish is seriously so easy to make! 

 

Ingredients:

  • Splash of Olive Oil

  • 5 chicken tenders

  • 2 Tbs Garlic Chili Sauce

  • 3 Tbs soy sauce

  • Salt and Pepper

  • 3 Garlic cloves chopped

  • 1 bag of shredded cabbage and carrot (about 4 cups)

  • 4 Green onions sliced thin on a diagonal

  • Broccoli Sprouts

  • 1/4 tsp red pepper flakes 

 

Dressing:

  • 1/4 c creamy peanut butter

  • 1/8 c soy sauce

  • splash of sesame oil

  • 1 tsp garlic powder

  • 1/4 tsp fresh black pepper

  • 3 Tbs garlic chili sauce

  • Juice of 1/2 a lime

  • 1 Tbs honey

  • 2 Tbs water (to thin, more or less to your liking)

 

Directions:

  1. Over a skillet, medium heat, cook your chicken with a splash of olive oil, garlic chili sauce and soy sauce until browned on both sides. Set aside.

  2. While the chicken is cooking, combine all ingredients for the dressing in a big bowl, whisking until smooth. Add just enough water until the dressing is a bit thinned out. 

  3. Add the cabbage and green onion to the bowl and mix until combined. 

  4. Pour onto a plate, top with green onion, bean sprouts and sliced chicken.

  5. Sprinkle over some red pepper flakes and there you have it!
