Tomato & Basil Salad with Crispy Prosciutto

I could probably...actually no wait. I could DEFINATELY eat this salad every day for the rest of my life. Sweet-Juicy-Salty-Creamy-and most importantly, HEALTHY!
I'm sure you have noticed my Salad Binge lately.
Well being summer just around the corner, salads are just what we need right now!

There's nothing better than eating a salad that makes you feel good, and this is one of those salads. Like I said in my earlier blogs, salads don't have to be boring! I took a traditional Caprese salad (which is good to begin with of course) and cranked it up a notch by adding crispy prosciutto! And drizzled with balsamic glaze.

I'm telling you, crispy prosciutto....it's the death of me.


This would be a great started for any dinner...or for lunch...or breakfast? Probably...
Ingredients:
1 large beefsteak tomato
really good mozzarella
2 slices of prosciutto
2 handfulls of spring mix
few leaves of fresh basil roughly chopped
balsamic glaze (optional)
balsamic vinaigrette
1/3 c good olive oil
4-5 Tbs balsamic
fresh black pepper
1 small garlic clove
1 Tbs good parmsean cheese
Directions:
This makes 1 salad
Place your 2 handfuls of spring mix on your plate
Top with sliced tomatoes.
Cut the crispy prosciutto (cook sliced in a pan over medium heat until golden) and place overtop, then sprinkle over the basil.
Pull apart the mozzarella and place over top of the salad.
Drizzle over the balsamic glaze and/or balsamic vinaigrette.
To make the vinaigrette, combine the 4 ingredients in a food processor until thick.
