I know....a cookie involving garlic.
And not just ANY cookie....a FLOURLESS one.....
That happens to be chocolate.
You, of course, can do without the garlic salt or even salt all together but salt pairs super well with sweets and I just adore it.
I found this salt at HomeGoods.
Anytime I see garlic anything it's mine!
The consistency of these cookies are a bit off.
Very gloopy and you wonder how they even hold together without the flour?!
The magic happens in the oven.
And then you have your sweet little chocolate cookies.
1 heaping cup of unsweetened cocoa powder (I used Hershey's Dark)
1 Tbs cornstarch
2 c powdered sugar
pinch of salt
2 egg whites
1 Tbs Vanilla extract
3-4 Tbs chocolate soymilk
1 c mini chocolate chips (I used Ghiradelli)
Preheat oven to 350 degrees
In a medium bowl combine all the dry ingredients.
In a separate small bowl whisk the egg whites until frothy then add in the whole egg and whisk until smooth.
Add the vanilla to the eggs, mix and then pour into the dry and mix until well combined.
Use the soymilk IF needed....the batter will be hard to mix at first but after about 5 minutes of some muscle work the dough will come together. If it gets to be too much just add a little soymilk in.
When combined mix in the chocolate chips.
Grease a large baking sheet (parchment would work too)
I used a 1 inch scoop - 3 inches apart. This made about 15 cookies.
Top each with shaved salt - bake for 7-9 minutes until done.
Remove onto a cooling rack to cool or SKIP THAT and eat them.
