Spinach & Corn Fritter-Burgers with Golden Onion Dip

CAN'T EVEN...
begin to explain how delicious these are.
Super-duper healthy too, no need for a bun. Unless of course you want one - this is a fantastic burger.

You don't need much oil
In fact - you don't need any!
Just a little butter.
That's why these aren't technically "fritters" because they're not fried but pretty much has the same ingredients as one.
So they're a fritter-burger!

Oh my and can we PLEASE talk about this dip.
Probably one of the EASIEST dips I've ever made.
It was a matter of having this one packet of seasoning that I had a box of - I was going to use it for something but never did so there it sat.

Acutally yes it can.
If you sub in vegan-cheese you have yourself a Vegan Fritter.
Ingredients:
2 c corn (fresh or canned - if using canned reserve 1/4 c of the corn juice)
1 1/2 c whole wheat flour
1 tsp baking powder
1/2 tsp salt
1/2 tsp pepper
2 small shallots minced
1 big handful of spinach chopped
4 green onions chopped
8 garlic cloves roughly chopped
1 c soymilk (plus 1/4 - 1/2 c)
1/2 c sharp cheddar cheese cubed
2 Tbs butter
1 1/2 c non-fat plain greek yogurt
1 packet of the golden onion mix
Makes about 10 fritter-burgers
Directions:
In a large bowl combine the corn, flour, baking powder, salt, pepper, shallots, spinach, green onion and garlic.
Pour in 1 c of the soymilk and stir - if too thick add a little more soymilk. (you don't want this to be too runny - you want it thick enough to form a patty and not fall apart. (I used 1 1/4 c)
After all mixed fold in the cheese.
In a large skillet or over a griddle, heat to medium high, add in some butter and drop a scoop full of the mix on. (1/4 c worked well but evetually I just used my hands because it was so sticky)
Shape the dollops of batter making them more round and thinned out.
Cook until super crispy and browned - takes a bit of time, about 10-15 minutes per side.
While they cook mix your dip.
Combine the yogurt - golden onion dip and 3 Tbs of the corn juice and set aside (the longer it sits the better)
When fritter-burgers are done serve with dip immediately and ENJOY!!!
