Spinach & Artichoke Dip

This Dip.

This Dip right here.....is the DIP.

There's not much more to say.....you just need to have this in your life.

Perfect served with buttery-toasty slices of baguette, or chips! Those would work...

 

A spoon..........yeah that would work too.

 

The cheese stretch you guys.....

It's all about the cheese stretch. (droooooooooooooool)

 

 

Ingredients:

  • 2 small jars of quartered marinated artichokes (about 2 c)

  • 2 big handfuls of spinach (I used a whole bag of fresh express baby spinach)

  • 6 oz cream cheese at room temp

  • 8 oz of whipped Vermont cheese (or whipped regular cream cheese)

  • ½ c light sour cream

  • 1 c plain – nonfat greek yogurt

  • 6 large garlic cloves minced

  • 2 medium shallots minced

  • 4 sprigs of thyme

  • 1 c fresh grated parmesan

  • 1 c shredded mozzarella (plus another c for sprinkling overtop)

  • ½ tsp salt

  • ½ tsp black pepper

  • 1 Tbs garlic powder

  • ½ tsp Italian Seasoning

 

Directions:

  1. Preheat oven to 400 degrees

  2. Grab a big bowl (you only need one bowl for this!)

  3. Combine all the wet ingredients until smooth - cream cheese's, sour cream, and yogurt. 

  4. Chop up your artichokes, spinach, shallot and garlic and throw into the bowl..

  5. Next add in your spices (salt, pepper, italian, garlic and thyme) and cheese's - mixing well.

  6. Pour into a baking dish - top with more mozzarella and some parm and bake until bubbly and browned. (use broiler at the end if needed)

  7. Servie with bread and ENJOY!
