Squirrel Tacos with Strawberry Jalapeno Salsa and Garlic Chipotle Cream

Before I go into these tacos....I'm sure you're wondering why they're called squirrel tacos! 

NO! Not made of squirrels!! 

But the story is quite unreal. - they just had to be named squirrel tacos.

So this actually went down on Cino De Mayo. (I know i'm a bit late - been super busy)

I got home from work - put some sweet tacos together and went to take pictures for a blog post.

 

THEN - all of a sudden - I hear this weird scratching. 

I look outback - I have about an acre of land.

The scratching stopped....I give one last look and then continue taking picture.s

And then the scratching started again!!

I then realzed it was coming from this old metal barrel outback - just the way the scratching sounded - with a slight echo.

 

I then KNEW something alive was in it - duh.

But I was thinking a cat or a groundhog or maybe a bird?

I don't know! But it was intimidating!

 

I walked to the barrel slowly....wonering what was going to be in the barrell......the scratching got louder and all of a sudden I heard splashing.

 

The barrell was full of water -

 

I IMMEDIATELY threw it over - eyes wide.

 

There was a squirrel....not moving. UGH and if you know me - i'm such an animal lover. I pretty much love anything with life -  let's put it this way - I save ants and spiders - the girls that scream for someone to come kill it - i'm usually trailing with a cup or napkin to save them.

 

So this was a huge heart break. I felt so helpless and sad - I thought the scratching was from that squirrel and I had JUST missed him but no.

 

Just over a few feet was ANOTHER squirrel slowly moving on his back. I then IMMEDIATELY called my brother because this was just something my mind couldn't handle alone.

 

I'm assuming they were "hims"

 

Then it kicked in - I flipped him over, dried him off - leaned him over the handles of the wheel barrow nearby to help get any water out - squeezing his sides.

 

We were hoping to no end that he would make it. But it was very iffy. He looked very bad and worn. 

 

But with a little love and a whole roll of paper towels later - he was more alert and in a tree! 

 

By night - around 8/9 he was gone. Saved the little guy. 

So there're the story.

 

The Squirrel Tacos.

 But yes -  Chicken. ;)

 

Ingredients:

  • 6 corn or flour tortillas

  • 6 Chicken Tenders - marinated in your fav sauce or plain

  • 5 large strawberries

  • 1/4 jalapeno diced small with seeds

  • Juice of 2 limes

  • pinch of pepper

  • shredded red cabbage

  • sliced orange bell pepper

  • sliced green onion

  • 1/2 c nonfat greek yogurt

  • 1/4 tsp honey

  • pinch of salt

  • 2 whole chipotle's in adobo sauce

  • 1/2 tsp garlic powder

 

Directions:

  1. Get your chicken marianting - I marinated mine in a Lawry's Caribbean Jerk Marinade - it's killer. Only needs about 30 minutes or so.

  2. When ready grill your chicken until done.

  3. Meanwhile dice up the strawberries and japalepno - mix with lime juice and pepper and let sit in the fridge.

  4. For the cream - blend together the yogurt, garlic powder, salt, honey and chipotles until smooth - set aside.

  5. When chicken is done take off the grill and grill your tortillas until warm and charred - flour is better for charring

  6. Place your chiekn on each tortilla and top with cabbage, pepper, green onion, chipotle cream and strawberry salsa.

  7. Garnish with lime wedges and ENJOY! Keep an eye out for suirrels.
