Personal Eggplant Parm Pizzas

Eggplant parm is sooooo delish. Wouldn't you agree?

Super traditional but thrown on a pizza is taking it to another level.

Yes - another Cauliflower crust.

I used orange this time! 

 With nice shards of good parmesan - uHH - I can't.

But I did and I so would again.

I used the smalled eggplant I could find.

You really think a big one will be fine but I always end up with a ton extra and end up eating it with a spoon.

You don't have to make personals either you can make one big one! I went with personals so that I could calculate how many calories were in each one.

 

WHY??

 

 

Because I recently just got a FitBit and the food tracker has taken over my life - for now. Until I see a cheesesteak.

 And guess what? 200 calories a pizza. 

One filled me up.

Ingredients:

  • 1 small head of cauliflower roughly chopped (I used orange)

  • 1/2 c shredded mozzarella

  • 1/2 tsp fresh oregano

  • 1/2 tsp salt

  • 1/2 tsp pepper

  • 2 eggs

  • 1 Tbs garlic powder

  • Pizza Sauce (about 1 c)

  • 1 small eggplant chopped

  • 5 cloves of garlic minced

  • 1 spanish onion chopped

  • olive oil

  • Salt and Pepper to taste

  • Shredded Mozzarella cheese (about 1 c)

  • Parsley or Basicl to garnish

  • Fresh Shaved Parm to top

 

Directions:

  1. In a food processor throw in the cauliflower - pulse until small grains.

  2. Transfer to a microwave safe bowl - covering the top with a wet paper towel and nuke for 10 minutes. When done set aside.

  3. Meanwhile in a sautee pan - cook the onions until browned - add in the garlic and then eggplant. Cook until eggplant is a bit soft and browned.

  4. Season to taste. 

  5. For the crust - preheat oven to 400 degrees. For the bowl of cauliflower - mix in the eggs, mozzarella, oregano, salt, pepper and garlic powder.

  6. On a large baking sheet lined with parchment paper form your crusts. This can be messy - very wet.

  7. Bake until browned about 20 minutes. You want to make sure the crust dries out a good amount since we will be using sauce. 

  8. When Cauliflower crusts are browned and done spoon on 1/4 c of the sauce on each.

  9. Top with a little cheese then a big scoop of the eggplant mixture topping with another small handful of cheese. 

  10. Bake unyil cheese is gooey and browned.

  11. Top with herbs and parmesan and ENJOY!!!!!
