Pavlova - I've said it many times and I always get the "HUH?" face.
Basically - baked meringue.....

.....One of the easiest desserts to make.
Super light and airy - topped with whipped cream and berries - of any sort really.
This was for Memorial Day so I went traditional. Strawberries & Blueberries
And I was surprised with my own little charcoal grill from my dad! I freakin love that thing.
I just had to share this pic I caught of it when first lit.

The meringue is baked low and slow to prevent any burning - to dry it out - and to get the edges crispy.
The long baking time may be tempting but just let it do what it needs to do in the oven - the outcome is beautiful.
This dessert displays well as a centerpiece and it looks like you've spent a lot of time making it.
Huge crowd pleaser.
4 large egg whites (room temp)
3/4 c sugar
pinch of salt
1 tsp vanilla (scraped bean if you have it)
1/2 tsp white wine vinegar
2 tsp cornstarch
Preheat oven to 200 degrees
In a stand mixer beat together (on high) the egg whites and salt until they become a bit firm - 2 minutes.
With the mixer on high - add in the sugar gradually.
Beat until peaks are firm and super shiny - anohter 2 minutes.
Line a baking sheet with parchment paper and dump out your egg white mixture.
Form into any shape you want, I mad mine into a circle - about an inch thick.
Bake in the oven for 1 hour and 20-30 minutes.
Once the time is up turn off the oven - keeping the door closed - and leave in for another hour or so.
Once the edges really start to crack and the meringuej is very firm.
When ready to serve, beat together the whipped cream, vanilla and sugar until slightly firm. I like my whipped cream a little on the runny side.
Top with fresh sliced berries - any of your favorite.
