Blue Bird Bagels

Bluberries. Bluberries. Blueberries.

They're a beautiful thing.

Shockingly - I am not a huge fan of them - meaning - I can't pop them in my mouth and enjoy them. They have to be in something....

Blueberry cobbler, pie, bars......cookies?? 

 

And with my love for making bagels I knew the perfect way to use them.

I had a pint of blueberries sitting in the fridge for a week and I couldn't let them go to waste!

But this time around - since i've made plenty of bagels before...I came across my dough to be sticky and I said "We'll see."

 

And behold - they came out perfect.

Literally perfect - super crispy outside and soft and beautiful on the inside.

Just look at them.

I KNOW YOU WANT THEM!

Plus - they're healthy right? ;)

 

What I did was I mashed 3/4 of the bluberries and left 1/4 whole when mixing them into the dough.

I think it worked out very well, if you want to leave them whole that's perfectly fine! You may end up using less flour too.

Nothin beats a fresh out of the oven homemade bagel!

And it's really not complicated, although it sounds hard.

Ingredients:

  • 1 1/4 c really warm water - I microwaved mine for a minute

  • 1 packet or 2 1/4 tsp active dry yeast

  • pinch of salt

  • 1 Tbs sugar

  • 3-4 cups of all purpose flour

  • 1 tsp cinnamon

  • 1 pint of blueberries (3/4 mashed 1/4 whole)

 

Directions:

  1. Mix the water, yeast, salt and flour together and let sit for 10 minutes.

  2. Meanwhile mash 3/4 of the pint of blueberries and set aside.

  3. When yeast is ready add in the bluberry mash followed by the flour - 1 c at a time until dough pulls away from the side of the bowl and is slightly sticky.

  4. Add in the rest of the whole blueberries mix and let sit in the bowl for 30-40 minutes.

  5. Since it's humid out where I live - I covered the bowl with a dish towel and let it rise outside. 

  6. When the dough is dont rising - take a pot of water and bring to a boil and also preheat oven to 400 degrees.

  7. Pull out the dough (makes about 9 bagels) by handfuls and poke a hole in the center forming into a bagel - drop immediately into the water and boil on both sides for 1 minute each. 

  8. Place the boiled bagels onto a parchment lined baking sheet.

  9. When all are done - bake the bagels for 20-25 minutes until tops are browned and crunchy.

  10. Take out and eat right away! They're amazing!! ENJOY!
