Peanut Butter & Chocolate Maple Granola Bars

Guys - you're own KIND BARS.

They're soooooooo good!

And Healthy!!

And you can pretty much make any kind you desire.

Just leave out the peanut butter for plain - or add anything extra you want, like coconut flakes or cocoa orrrrrrr cinnamon OR dried fruit ORRRR marshmallows, yeah so back to the healthy version.

You could even do without the chocolate drizzle....but what are you, Nuts?!

The kiss of chocolate is what makes this.

Ok so back to the bar - I tried to make it as affordable as I could because nuts tend to run on the expensive side.

I had macadamia nuts in my hand, brazilian nuts.....and then I saw the price and just couldn't do it.

So I went with the good old roasted peanuts and almonds.

Luckily I had some pecans on hand so I threw those in but you don't need those. Simple is best.

So i'm not going to hide this but it took me a few tries to get the best bar.

And boy did I mess up bad.

Key is using corn syrup! To get a nice gloss and keep the bars together.

I also went to buy flax seed and accidentally bough milled flax - but it ended up working fine in the bar.

If you have chai seeds they would be PERFECT but if you don't, no worries.

I went to buy a bag and it was over 12$ and that wasn't cutting it.

I wanted to create a bar where it was really saving money in the end instead of buying a box of kind bars.

And these make for the perfect snack.

Super filling without all of the preservatives and extra sugars.

If you have the time - make your own bars guys, seriously.

I love eating foods that I know what's going in it.

And I love that really in the end - you're saving money!



  • 2 c almonds

  • 1 c peanuts

  • 1/2 c roughly chopped walnuts

  • 1/4 c roughly chopped pecans

  • 1 c puffed rice

  • 3 Tbs milled flax seed

  • 3/4 c old fashion oats

  • 1./4 c honey

  • 1/2 c light corn syrup

  • 1/4 c maple syrup (karo)

  • 1/4 c smooth peanut butter or chunky

  • 1 Tbs vanilla

  • pinch of salt


  • 1/3 c semi sweet or dark chocolate chips

  • 1 Tbs sunflower oil


  1. Line a 9X13 dish with parchment paper.

  2. Over medium-low heat in a saucepan add the honey, corn syrup, maple syrup, peanut butter, vanilla and salt. Bring to a slow boil.

  3. While that heats add the almonds, walnuts, pecans, puffed rice, flax and oats to a large bowl..

  4. When syrup mixture starts to warm and become smooth keep whisking until bubbling.

  5. Pour over the nut mixture and mix until well blended.

  6. Pour the granola in the parchment lined baking dish and press to form. Wet your fingers to help prevent sticking.

  7. Let sit until cooled at room temp - fridge will work too.

  8. When ready pull out of the dish and cut into bars (makes about 20)

  9. In a microwave safe dish add the chocolate and oil and nuke 30 seconds at a time until smooth and glossy.

  10. Drizzle over the bars and serve! These keep for 2 weeks in a tightly sealed container;
