These tacos scream summer....don't you think.
Super colorful, filled with tons of flavore and EASY to make.
Pizza is my second boyfriend but tacos come in close.
You can't mess up a taco and you can turn any meat into a taco, so what's not to love?
Although I enjoy ground beef the most, chicken is super easy to make for this and you can dress the chicken with anything...Buffalo, BBQ, FRIED chicken, Plain (salt and pepper) grilled chicken....the list can go on.
And what pairs super well with chicken, instead of beef, steak or pork...is fruit!
You can pair almost any fruits with chicken - my favs are pineapple, mango, strawberries and limes.
Yum - all of those combined wouldn't be bad!
But since I went the BBQ route (using my all time fav BBQ sauce Memphis Bullseye) Pineapple was the winner.
Pineapple and BBQ sauce are BFF's.
This recipe would be great to use for any leftover chicken!
Just shred the leftover chicken and mix with BBQ sauce and reheat.
Now I need a taco.....

sliced green onion
Combined the pineapple, garlic, onion, salt and pepper and lime juice and place in the fridge until ready to serve.
In a saute pan over medium heat cook the seasoned (salt, pepper and garlic powder) chicken tenders with a little oil until browned, about 10 minutes.
Take out to let cool, clean out the same pan and cook your bacon in it until crispy.
When bacon is done set aside to drain on a towel, drain all but 1 tsp of bacon fat in the pan, shred the chicken tenders and place ino the pan with bacon fat and cook over medium heat for 1 minute.
Pour over the chicken the BBQ sauced and mix until combined and reduce heat to low. Then fold in crumbled bacon.
To assemble, place on the soft taco the shredded chicken, pineapple salsa and desired toppings.
