Open Faced Avocado Breakfast Sandwich with Candied Bacon

WHOA.

I know right. 

An open faced morning sunshine.

But let's not overlook the bacon with all this beautiful color going on.

 

No this isn't just any kind of bacon...

This is brown sugared coated bacon....

Which turns into......

Candied bacon....

 

yessssss

 

If this picture doesn't make you want bacon - something is terribly wrong.

 

This doesn't take long to cok but you need to make sure to keep an eye on them, the sugar can burn within seconds.

And the oven is the best way to do this, no stovetop.

 

So aside from the jar dropping bacon.. you need to have some good bread.

I used a nice rosemary and olive oil bread I found at the supermarket.

Pretty much any kind of thick bread so that there's room to pile goodies onto. Nothing thin like a baguette.

 

And next, you need really nice ripe avocados.

To make it easy, cut the avocado slices in its shell, using a butter knife and squeeeze lemon juice on them to prevent browning

When ready to use scoop out with a spoon.

 

And with all these tasty toppings, comes a wonderful protein packed breakfast.

You can used any kind of eggs, a poached would be fabulous! Fried, sunny side up, over easy, or what I did - scrambled egg whites.

 

I'm not a huge fan of eggs, only sometimes and that somtimes is when they are in breakfast sammiches or cakes.

This is a super easy breakfast to make and I hope you give it a try - if not, at least make the candied bacon!

 

 

Ingredients:

  • Eggs (I used egg whites)

  • Bacon (I used Hatfield Maple)

  • 2 Tbs brown sugar

  • 1 ripe avocado

  • Lemon juice

  • 1 small tomato (I used heirloom)

  • sliced shallots

  • Good bread (I used rosemary olive Italian)

  • Mozzarella cheese or any of your choice

  • Chives to garnish

 

Directions:

  1. Preheat oven to 400 degrees and line a baking sheet with aliuminum foil, layer on the bacon and sprinkle over about 2 Tbs brown sugar - you don't need much.

  2. Bake for about 15-20 minutes until spots start to darken and become candied - don't leave it! The sugar can easily burn.

  3. When bacon is done, take out and let cool - using a spatula to take them off, they harden and will stick to the foil.

  4. Slice your bread into 1 inch pieces and toast in the oven right on the rack at 400 until lightly browned, turning twice - the last flip place your cheese on the bread to melt.

  5. Slice your avocado in half, and slice into strips in the shell using a butter knife. Squeeze lemon ontop to prevent browning.

  6. When toast is just about done cook your eggs last depending on how you like them. Poached, sunny, scrambled, fried..

  7. Place the egg on the gooey cheesy toast, top with tomatoes, onions, bacon and avocado. Or really - top with whatever you love most!
