Cheddar, Chicken & Potatoes with Spiralized Broccoli - Bake


My life now revolves around the cast irons.

Why didn't I ever jump on this bangwagon????

Cast irons are THE best to cook with. Even heat - no scratching, you can use whatever utensils you want without worrying you'll ruin the pan, and you can throw them in the oven. At ANY temp.

Must....Buy....MORE.

Buy yes. Spiralized broccoli.

Who'da thunk??

I bought enormous broccoli, and wondered what to do with the enormous stalk I was leaving behind.

I'm not a stalky person.

So I just stared at it, and Bing! Can I noodle-ize this???

It was hard.

I got one beautiful curl out of the two stalks - as you can see in the pictures. I made sure it was seen.

The rest of the broccoli come out as half curls, which still worked! It was a great way to use the broccoli in this dish without having to waste it.

Now let me reminisce a moment.

Cheddar, broccoli and potatoes. This was a dish I LOVED.

The frozen kind you microwave for 5 minutes.

And I wanted to re-create this but in a better version, and added chicken!

And lots of garlic.

This is such an easy dish to make and really only takes a few ingredients.

Definately a huge comfort food.

This is yet another - one pan dish.

It's delish guys. And if you want to invest totally get a cast iron.

This one I found at homegoods for $14!! It was such a steal.

Cook Time: 30 minutes

Prep Time: 10 minutes

Servings: 3-4

Ingredients:

  • 3 medium potatoes cut into 1 inch cubes

  • 4 Tbs butter

  • 2 small broccoli heads, cutting the florets off and into small pieces, keep the stalk if you want to use it to make noodles

  • 6 garlic cloves pressed/minced

  • 1 medium shallot sliced into thin rings

  • Cooked Chicken - I used chicken tenders (6)

  • Extra sharp cheddar cheese cubed/shredded

  • Salt and Pepper to taste

Directions:

  1. In a heavy, oven-safe pan, over medium heat add in the butter and cubed potatoes. Cook until browned and done - about 15 minutes.

  2. Add in the broccoli florets, garlic and shallots stirring occasionally. Cook for another 10 minutes, reduce heat to medium low. (if you want to used the spiralized broccoli stem add this in too but it's optional)

  3. Preheat the oven to 400 degrees

  4. Add in the cooked cubed chicken and then throw in the chunks of cheddar cheese.

  5. Place the pan in the oven and bake until cheese has melted, then Serve immediately

  6. ENJOY!!
