Bacon & Spicy Sausage Baked Ziti

Baked Ziti peeps.

 

But done quickly and packed with MAD flavor.

 

mad flavor.

 

Yes you guessed it. Bacon.

 

Annnnnnnnd hot sausage.

GO!

 

Start with a good tomato base - for me. I went san marzano {mixed with a lot of beautiful pressed garlic} 

Then a good pasta, I didn't go traditional ziti, I went rigatoni - because of the ridges. Helps grab hold of the san marzanos love.

There's that bacon.

And that delicious spicy sausage.

And then top with really good mozzarella. 

 

And you're done!

NOW REPEAT!

 

Now end with the rest of your pasta. 

And the rest of your sauce.

Glorious. 

 

Now end with thick slices of fresh mozz.

Season....just my personal touch. You don't have to.

And bake.....til gooey and bubbly. 

I totally planned to crumble bacon on at this part. But...I ate a few too many where I ended up empty handed.

 

I blame myself completely.

You can totally mix all ingredients together and put into a baking dish...but I really love those crispy noodles on the edge so that's why I chose not to. 

 

 

 

And want to know the sad part of this whole thing?

That's ALL I had left for the season. 

 

My basil plants are bald sticks now. :(

Ingredients:

  • 1 box of short pasta (I used rigatoni) - cook according to directions, set aside

  • Good tomato sauce (I used crushed san marzanos)

  • 8 large cloves of garlic pressed or finely minced

  • 1/2 pound of bacon cooked until crispy 

  • 1 pound of hot italian sausage cooked (take off casing) until done

  • Really good mozzarella

  • Basil

  • Parmesan

 

Directions:

  1. Preheat oven to 450 degrees.

  2. In a bowl, combine tomato sauce (about 3-4 cups) and pressed garlic, set aside until needed. (you can skip the garlic of course - but you know how much I love it!)

  3. Cook bacon until crispy, set aside.

  4. Cook hot italian sausage until done, set aside.

  5. Bake pasta accordingly, set aside.

  6. In a baking dish, make a layer of tomato sauce, then add in 1/2 the pasta, then top with 1/2 the bacon, 1/2 the sausage, and half the mozzarella. 

  7. Pour over more tomato sauce, then the rest of the bacon and sausage. 

  8. Top with more mozzarella then remaining pasta.

  9. Cover with a ton of tomato sauce and thick slices of mozzarella. 

  10. Season (optional) 

  11. You can also forget the layer and mix all up in one large bowl and pour into a baking dish. 

  12. Bake for 20 minutes until gooey and bubbly.

  13. Top with freshly grated parmesan and basil.
