Cheesy Buffalo Jalapeno Popper "Bread" Sticks with a Ranch Cauliflower Crust

I will give you a moment to soak that in.









Ok. ready? YES. These are BOMB.

All I have to say is - Cauliflower is magical. For those trying to cut out breads, this is your thang.

I will just fill this post with pictures because I can't get enough of how beautiful these turned out.

So let us begin shall we? Our cooked bald crust...

I don't know why I added buffalo sauce to the crust but it sure did make it a pretty color! You must make sure you cook this baby fully - as in, it gets crispy in certain areas. I did not use flour or eggs in this crust and it totally works because of all the glorious cheese! So make sure you give this baby enough time to cook thru.

Then top with more cheese and jalapenos.

And then you place this lover back in the oven to get gooey.

And then you have your cheesy goodness.

I let this cool just a bit before cutting, mainly for the crust. I wanted to make sure it held together. So make sure you let it cool a good 10 minutes.

Then cut in half - width wise - then diagonally to create those bread sticks we all know and love.

And then to get that stretchy cheesy look....I used an offset spatula haha would you believe that?

I placed it under each stick and pulled slightly. And there you have it...

And then, to finish them off...

Some more hot sauce

and some ranch...

What makes this are the Jalapenos. They add such a nice pop of color.

You don't have to add these on - you can simply do without but I envisioned a popper bread stick with buffalo sauce and this was born.

I even left the seeds on to add some extra spicy-ness

Ranch Cauliflower Crust:

  • ½ large head of cauliflower, roughly chopped

  • 2 Tbs Franks Red Hot Wings Buffalo Sauce

  • 1 packet of hidden valley ranch powder

  • 1 Tbs garlic powder

  • ¼ c grated parmesan cheese

  • ½ c shredded mozzarella cheese

  • ½ c shredded sharp cheddar cheese

Cheesy Topping:

  • ½ c shredded mozzarella cheese

  • ½ c shredded sharp cheddar cheese

  • 1 large jalapeno sliced into rings

  • Franks Red Hot Wings Buffalo (for garnish)

  • Ranch (for garnish)


  1. Roughly chop – stem and all, the cauliflower. Place into a microwave safe bowl with a little bit of water and a damp towel covering the top and microwave for 3 minutes at a time until cauliflower is done. About 6-9 minutes.

  2. Preheat your oven you 425 degrees (I used a pizza stone for this, so preheat the stone as well otherwise line a baking sheet with parchment and set aside)

  3. Drain and dump into a food processor. Blend and mix – blend and mix – until mostly smooth.

  4. Then dump the puree back in the bowl you microwaved the cauli in.

  5. Mix in the rest of the crust ingredients (franks, ranch powder, garlic powder and cheeses)

  6. Then – if using a pizza stone, place a piece of parchment on the hot stone and dump your crust ontop and form into any shape you desire! Making sure it is ¼ - ½ inch thick, if not using a stone, use a parchment lined baking sheet and place into the oven.

  7. Bake for about 20 minutes or so until the crust is browned, then top with cheeses and sliced jalapenos and bake for another 10 minutes until cheesy and gooey.

  8. Take out, let cool for 10 minutes then slice and ENJOY!!!!!
