Guys, homemade cheezits.
I CAN'T EVEN.
And they're so easy, AND THEY'RE GLUTEN FREE! Could it get any better?
Oh wait - yes. With Roasted Garlic.
Soak that in.
All this is, is a flour - cheese and butter mixture with a little bit of water.
You have to have a food processor for this though - i'm sorry guys, for those who don't have one.
You can totally try to make this by hand but you will have chunks of cheese and inconsistency in your dough. So if you can invest in a food processor - please do! They're wonderful! And they save so much time.
After you have your dough you just section into 1/4' and roll each 1/4 out into 1/4 inch thickness, cut your squares and then bake!
And you have the cutest little cheese crackers! Don't forget to poke a hole in it! It's really not necessary but it just resembles a cheezit.
One thing - to get a really really crispy cracker you have to bake these until super golden brown. I made two batches - one being lightly browned and they came out great, just a little bit soft in the center. The second batch I left in longer and they came out absolutely perfect and crisp.
I used a rice flour for this instead of an all purpose - if you do not have rice flour or if you don't have a gluten allergy go right ahead and use the good ol all purpose.
You also can use pretty much any kind of your favorite cheese that isn't too "dry" such a a feta. Any kind of cheddar or provolone would be awesome in these.
Maybe blue cheese? Hmm........might be coming in our future!

3 oz Cabot Extra Sharp White Cheddar
3 oz Cabot Alpine Cheddar
3 oz Cabot White Oak Cheddar
1 c rice flour (gluten free Betty Crocker)
Salt and Pepper to taste
1 Tbs garlic powder
4 Tbs butter
8 garlic cloves smashed
1 - 2 Tbs ice cold water
In a small saute pan over medium - low heat add in your butter and smashed garlic, cook until soft about 10 minutes and set aside to cool
In a food processor get your cheeses grated.
Add in the flour, salt, pepper, garlic powder and garlic butter mixture and pulse until well combined. Then add in the water 1 Tbs at a time until dough ball JUST forms you want the least amount of water possible.
Wrap into plastic wrap and set in fridge as oven preheats.
Preheat to 350 degrees and line a baking sheet with parchment paper.
When ovens ready, take your dough ball, cut into 1/4s and taking 1/4 at a time, roll out to 1/4 inch thickness and cut to your desired shape.
Place on parchment lined baking sheet using a spatula to transfer and bake for 20 minutes or until golden browned.
Cool for 5 minutes and ENJOY!!!!
