So let me begin by screaming HAPPY BIRTHDAY GIRLY!!!!! To my best friend Alyssa.
Today is her birthday, so why not post about da best pizza everrrrrr.
It all started about two months ago where Alyssa started talking about Artichoke dip......she'd bring it to my apartment.
And we'd eat dip and chill and drink wine.
That is when I realized Alyssa had an obsession with Spinach Artichoke Dip.
You'd think - us being friends for 11+ years i'd know this already.
Then....as I was blogging one night, she suggested I turn Spinach Artichoke dip into a pizza....and that's what I did.
We talked about this for a month and then it finally happened.
She also had to have a stuffed crust.
And look what we have here people.
Da most bomb pizza ever.
We both could only eat one slice because of how rich this is.
The creamy cheesy aritchokey center with the buttery stuffed crust....
It's like, the moment in time where you close your eyes and really start picture what heaven looks like.
We saw it.
But - one thing i'd like to mention, cutting the spinach this way made a world of a difference.
Instead of leaving them whole or using frozen spinach, this was the best way to incorporate them.
You weren't biting into a chunk of spinach - nor was it falling of of the pizza when taking bite after bite.
Adds a nice elegance too ;)
So this goes out to you girl. Hope you're having the best birthday ever!
Alyssa's Spinach Artichoke Dip, Stuffed Crust Pizza
yield: 4 servings
prep time: 10 minutes
cook time: 30-40 minutes
Pizza Dough Recipe – or Store Bought
Extra Sharp Provolone Cheese – 4 slices (cubed or torn into pieces)
Fresh Mozzarella – torn into large pieces (about a half a cup)
1 ½ c fresh baby spinach (chiffonade like basil)
8 mozzarella sticks
¼ marinated artickokes
1 stick of salted butter
5 garlic cloves smashed (just to infuse, take out and set aside after butter is done)
2 Tbs minced fresh parsley
Artichoke Dip Spread
8 oz (whole block) of Cream Cheese
1/8 c grated parmesan cheese
Garlic cloves from the butter above – roughly chopped
½ c marinated artichoke hearts roughly chopped
Salt and Pepper to taste
Preheat oven to 450 degrees – preheat with a pizza stone. If you don’t have one, use a baking sheet but do not preheat the baking sheet.
In a small sauce pan over medium low heat, combine the butter and garlic – cook for 10 minutes then add in the parsley and turn the heat off. Scoop out the garlic cloves and let cool on the side.
For the spread, combine all ingredients (don’t forget we’re using the garlic that was used in the garlic butter) and set aside.
Grab your pizza dough and place on a well floured pizza peel (if you don’t have one, form on the bottom of a well floured baking sheet)
Roll the dough to desired thickness and place your mozzarella sticks along the edges, then fold over the pizza dough to close in the cheese – boom. Stuffed crust.
When oven is ready, slide your pizza onto the pizza stone – or baking sheet if you don’t have one – and bake for 10 minutes.
Open oven and dollop on the artichoke spread, and shhhhmear all over.
Next top with spinach and cheese and end with the artichokes ontop so we can see them when this bakes.
Bake for another 20-30 minutes, this pizza takes a bit but you will know when this is ready when cheese is bubbly and bottom of the pizza is browned.
Let cool for 10 minutes and ENJOY!!!!!!!!
