This is what happens......

When you crave three different things at once.

You blend them together.

A smore meets peanut butter meets brownie.

Need I say more?

Brownie batter is my all time weakness......

And the best part about this batter is that you can eat it no problem, because there aren't any eggs in this batter.

Just the way I like it - which means you can under bake and have gooey brownies and not have to worry about a thing.

I will though - warn you.

After baking the brownies for a half hour - when you bring them out - they look gloopy still. Like they didn't even bake and you're going to wonder just as I did - what the hell happened.

I almost threw them away and called it quits. No lie. But I just tried one last thing and that was chilling them.

So don't you worry :)

The only thing this is missing is a giant glass of milk.

But i'm not really a fan of milk - i'm more so on the soy side.

But best believe a glass of wine also complimented this well.

I literally had all of the ingredients for this already, which made it easy.

Maybe you do too if you went hard on the smores for the 4th! and have some left over.

Lets just talk about that peanut butter for a second.

Could it look anymore magical?

And that graham cracker bottom.

This is literally the best s'more brownie you'll have.

And it's filled with peanut butter.

I just can't.

Peanut Butter S'more Brownies

yield: 9 brownies

prep time: 10 minutes

cook time: 30-40 minutes

chill time: 2 hours - overnight

  • 1 ½ c chocolate chips (I used a mixture of milk and dark chocolate chips)

  • 1 stick of butter cubed

  • Pinch of salt

  • ¼ c creamy peanut butter

  • 1 Tbs vanilla

  • 3 Tbs vegetable oil

  • 2/3 all purpose flour

  • ½ tsp baking powder

  • Mini marshmallows

  • More Peanut butter

  • Extra Chocolate Chips

  • Graham Crackers (I used cinnamon)

  1. Preheat oven to 350 degrees

  2. In a microwave safe bowl combine the chocolate chips, butter, salt and ¼ c peanut butter.

  3. Microwave in increments of 30 seconds until chips have melted and it is a smooth sauce.

  4. Add in the vanilla and vegetable oil, whisk – then add in the flour and baking powder, stir until combined.

  5. In an 8x8 pan, lined with parchment paper, place on the bottom graham crackers (I had to break a few to make it fit evenly) so you will have a graham cracker lined dish.

  6. Pile on some chocolate chips, dollops of peanut butter and marshmallows.

  7. Pour over your brownie batter, spread evenly.

  8. Top the batter with broken graham crackers, chocolate chips and mallows.

  9. Bake for 30-40 minutes.

  10. Take out, let cool completely and then refrigerate for 2 hours or overnight.

  11. Once completely cooled – cut and ENJOY!
