To all my meat lovers out there, this is totally not for you.
But it could be..... ;)
What makes this fabulous is the crispy chickpeas of course.
The only thing that is extremely time consuming is peeling off all the shells of the chick peas.
But - pour yourself a glass of wine and start goin to town
This is one of my easier recipes, but that is if you have all components on hand or pre-made, such as the pita and tzatziki sauce.
The tzatziki sauce you can make a few days in advance, the longer it sits the better it gets!
The Pita I wouldn't go more than a day ahead, it would be better that day.
OR you could simply get these two things pre-made and be ready to go!
The crispy chikpeas are the star of course!
You could also use a hummus spread with veggies if you aren't into the tzatziki.
Play around and have fun with this!
You could even pack it with all grilled veggies instead of the chicks.
Do whatever your little heart desires.

Garlic Roasted Crispy Chickpea Gyros
yield: 4 Gyros
prep time: 20 minutes
cook time: 20-25 minutes
In a food processor combine:
Pulse until smooth – done!
Take a whole can of chick peas, drain and place on a paper towel.
Remove all the shells from the chickpeas.
Place on a baking sheet, coat with olive oil, salt, pepper, garlic powder, paprika and onion powder and roast at 400 degrees for 20-25 minutes until they become crispy.
The last 10 minutes of the chickpea roasting process, throw in the asparagus.
Grab a pita, smear on some tzatziki sauce, heavily….
Place on your roasted chick peas, asparagus, tomatoes and onion, fold…
