Birthday Cake Donuts
These donuts man....
Are everything you imagine birthday cake to be.
But for breakfast?
This was my first time making donuts...fried. I've baked them before but these weren't too hard!
Just need to have a lot of rise time.
If you're not into birthday cake you can certainly stuff these with anything your heart desires.
My brother for example wanted Oreo cheesecake....
You can also do a jam...
A mascarpone berry filling.....
Or go savery with a bacon and tomato jam....
It could go on and on. But this donut recipe is basic enough to go any way you'd like.
How cute though.

Birthday Cake Donuts
yield: 18 - 20 donuts
prep time: 2 hours 20 minutes
cook time: 1 minute
2 Tbs active dry yeast
1 Tbs sugar
1/2 c very warm light cream (or milk)
3 egg yolks (room temp)
3 Tbs butter (room temp)
2 1/2 c flour
pinch of salt
3 cups vegetable oil
Birthday Cake Filling:
7 oz cream cheese (room temp) reserve the last ounce for icing
half a box of Funfetti cake mix
1 tsp vanilla
1/4 extra sprinkles
1/2 c whipped cream
1 oz cream cheese
3 Tbs confectioners sugar
2 Tbs heavy cream
In a bowl combine the yeast, sugar and warm cream. Let sit for 10 minutes.
Add in the eggs, butter, flour and salt and mix with a dough hook for 8 minutes or so, until dough comes together - when dough is pressed it bounces back slightly.
Coat the dough with a little oil and cover with plastic wrap - letting rise for 2 hours.
For the birthday cake filling - combine all ingredients with a mixer - set aside.
For the icing, combine all ingredients with a whisk and set aside.
When dough is ready - roll out into 1/3 inch thick and cut out your donuts - I used the top of a glass to cut out my circles. Repeat until all are done. Let rise another 20 minutes under a damp towel.
Meanwhile, in a heavy pot - pour in your oil and using a thermometer over medium heat bring the oil to 380 degrees.
When oil is ready, drop in two donuts at a time, fry for 30 seconds on each side until puffy and golden and drain onto a paper towel using a slotted spoon.
Repeat until all are done then let cool completed.
Stuff with your birthday cake mixture using a piping bag, top with the icing and sprinkle over extra sprinkles.
