Crispy Plantain Tacos with Chipotle Crema

Plantains in tacos? Whaaat? 

 

Its a match made in Carly Heaven. 

 

These are simple to make, they're healthy and vegetarian! 

Here's how you get the plantains cooked...

 

I bought slightly blackened plantains - I did not get the green ones. I like the sweetness with the more ripened ones.

 

Cut the plantains into 1 inch thick pieces and cook until browned. 

I used grape seed oil for this since it's super mild, I didn't want the plantains soaking up any harsh oil flavors like olive oil. 

 

Then flip..

So beautiful eh?

 

Now when the bottom is browned, take out the plaintains and smash very gently until they are forms into a pancake. 

 

I used a back of a wooden spoon.

 

Then place back into the pan and brown again on both sides.

And there you have it! Your own crispy plantains. 

 

You can certainly eat them with anything. Or even go sweet with it and add browned butter with brown sugar and ice cream. 

 

mmmmmmmmmmmy goodness.

 

Or do what I did, and throw them in a taco :)

Now for the crema, if you can find Mexican Crema - PERFECT. If not, mix some sour cream with some heavy cream to thin it out a bit. 

 

Mexican Crema is where it's at though. There isn't a huge huge difference but with Mexican Crema it just has got something about it that you can't deny.

 

So - I took the Creama and mixed it with adobo sauce, which is the sauce the Chipotle's lay in, in the can. 

 

Simple! That's it! Done.

To go with the taco I just went with some subtle flavors, and really...what I found in my fridge and cabinets. 

 

We have some onion, limes, radishes black beans and parsley. 

 

I'm no fan of cilantro but if that's what you'd prefer definitely throw some of that on there instead! 

And not to forget the squeeze of lime at the end.

 

The most important part.

 

 

Crispy Plantain Tacos with Chipotle Crema

 

yield: 6 Tacos

prep time: 25 minutes (including making the plantains)

cook time: 20 minutes

 

 

Ingredients:
Tacos:

  • Crispy Plantains****

  • Floured Tortillas (gluten free tortillas for gluten free recipe)

  • Black Beans

  • Thinly Sliced White Onion

  • Thinly Sliced Radishes

  • Limes

  • Parsley

  • Chipotle Creama

 

Chipotle Creama

  • 1/2 c Mexican Crema (or sour cream with 2 Tbs heavy cream)

  • 1/4 c Adobo Sauce (from canned chipotles)

 

*****2 slightly ripened plantains (yellow with some dark spots) In a saute pan, over medium heat brown 1 inch thick pieces of plantains, flip, brown - then smash lightly with a wooden spoon and brown again on both sides. Drain on towel.

 

Directions:

  1. Mix together the crema and adobo sauce, set aside.

  2. This is a pretty easy assemble!

  3. Layer on the crema first, then beans and onions, Then the crispy plantains and radishes.

  4. Drizzle on some more adobo sauce if desired, squeeze of lime and DONE!

  5. ENJOY!
