Broccoli Tots with Wine Infused Cheese Sauce

I know what you're thinking...

 

Wine infused Cheese Sauce??? But why???

 

But.Why.NOT?

 

Beer and cheese always go hand in hand....but so does wine. 

If you really think about it - cheese and grapes with a glass of Pinot Grig is the perfect way to end a long day. 

 

So, I put dat wine in dis here cheese sauce and it was the extra kick of richness that these broccoli tots needed.

I will say though, these took quite some time to form. 

So this would be a great way to involve family or kids!

 

And not to mention, these are extremely healthy. 

You can even do without the cheese but .... who am I to do that?

 

Who would I be?

And after a little bake....

You have your perfectly cheesy tots.

 

I flip these through halfway so that both sides get a little bit of browning. 

The cheese also bubbles out and hardens when cooled, so the cheese also helps aid in the crispness of these tots.

 

But then.....

 

The time,

The time of all times.

Where time is good timing.

CHEESE TIME.

 

Have you ever felt this good looking at something so bad.

 

Like bad to the bone bad.

 

Like you want to sneak this under your pillow at night so mom and dad don't find out bad.

 

Like you wanna dive into a pond of gooey cheese bad.

 

bad.

Broccoli Tots with Wine Infused Cheese Sauce

 

yield: 20 broccoli tots

prep time: 15 minutes

cook time: 16 minutes

 

Ingredients:

  • 2 heads of broccoli

  • ½ c of extra sharp white cheddar cubed very small or shredded

  • ½ c of sharp cheddar (orange) cubed very small or shredded

  • 4 garlic cloves minced

  • 1 c Italian seasoned panko bread crumbs

  • 1 Tbs minced dried onion

  • 1 Tbs Garlic powder

  • ½ tsp salt

  • ½ tsp fresh cracked pepper

  • 1 egg

 

Cheese Sauce:

  • 1 c sharp cheddar cheese (orange) cubed

  • 1 tsp fresh minced garlic

  • 3 Tbs Pinot Grigio (optional)

 

Directions:

  1. In a large pot bring water to a boil.

  2. Cut your broccoli into pieces – doesn’t matter the size.

  3. When brought to a boil, dump in your broccoli pieces and cook for about 5 minutes, drain and rinse with cold water to stop the cooking process.  Set aside.

  4. In a bowl add the rest of the tot ingredients.

  5. When broccoli is cool – cut until the texture is “rice-like” – add to the tot ingredient bowl

  6. Mix until well combined. If too wet add a bit more panko but not too much, we need the mixture it be slightly wet so the shape will form and stay in place.

  7. Preheat oven to 400 degrees and line a baking sheet with parchment paper.

  8. Take about 1 Tbs of the broccoli mixture (I used a 1 inch scoop) or grab more or less…and form into a tot shape. Or any shape you desire. Place on the baking sheet and repeat until all are done.

  9. Bake for 8 minutes on one side and then flip and bake for another 8 minutes.

  10. Meanwhile, in a small saucepan over medium low heat add your cheese sauce ingredients, all at once.

  11. Once the cheese melts, whisk and reduce the heat to low.

  12. When tots are done, goo-ing, and lightly browned – DUMP ON DA CHEESE.

  13. ENJOY!!!
