Spicy Queso Dip

As if cheese couldn't get any better...just the way it is...

 

well it did.

wit dat chipotle. 

 

Chipotle people....is bomb. The best way to describe it...is the best kinda heat. The heat you want. Where its that kick but not so much that you can't feel your tongue anymore. 

 

I used the adobo sauce the chipotles were in, not the actual pepper. 

And a major key here. 

 

MAJOR KEY.

 

Is using a cast iron. 

 

It's just somethin about that hot cast iron in the oven, that creates the browned cheese on the sides of the pan, becoming crispy and just way too perfect. 

 

And let's not skimp on the toppings. 

This was a last minute add and it went so well with the queso. Adding crunch and freshness.

The creaminess is out of this world.

Id put that cheese on anything. 

 

even on my phone.

Nom.

This dip screams FOOTBALL. 

And such a crowd pleaser this is! This was gone in minutes at my home. 

 

Just don't forget the cast iron is scorching hot.....whoopsie.

 

That's why I love the cast iron. It will keep whatever you made in it, very warm for a long time.  They are not costly either.

Spicy Queso Dip

 

yield: 6 servings

prep time: 15 minutes

cook time: 20 minutes

 

Ingredients:

  • 4 Tbs salted butter

  • 5 large garlic cloves - pressed or finely minced.

  • 1/4 c + 1 tsp flour

  • 3 oz cream cheese

  • 1 Tbs dried minced onion

  • 2 1/4 c milk + 1/4 c more if needed

  • 11 ounces extra sharp cheddar cheese - cubed or shredded 

  • 3 Tbs adobo sauce (chipotle sauce)

 

Toppings:

  • Plum tomatoes

  • Fresh Jalapenos

  • Sour Cream

  • Chopped Red Onion

  • Parsley

 

Directions:

  1. Preheat oven to 400 degrees

  2. In a cast iron or heavy oven proof saute pan, melt the butter over medium heat. 

  3. Add in the garlic and cook for 2 minutes.

  4. Add in the flour, using a whisk, and whisk until the mixture becomes lightly golden brown. 

  5. Add in the cream cheese and whisk until melted and incorporated.

  6. Add in the minced onion and 1/2 c of milk, whisking until full incorporated. 

  7. Add another 1/2 c of milk, when sauce starts to thicken add in the rest and keep whisking until the sauce starts to thicken again. 

  8. NOW add all your cheese! 

  9. When cheese has melted add in the adobo sauce, stir and then place the whole pan in the oven and let bake for 15-20 minutes until bubbling and lightly golden on the edges.

  10. Add desired toppings, serve with chips and ENJOY!!
