Chipotle Lime Chicken

A post about chicken? 

Well, abso freakin lutely. 

 

It didn't hit me until recently, going simple and in one direction is pretty great sometimes. 

 

So why not a simple chicken recipe? That can be used in pretty much anything. 

Tacos...wraps...salads.....This is a recipe that can go any direction. 

 

And not to mention, extremely easy! 

Alls it requires is a little citrus...lime. 

A little olive oil....

 

and...get ready. 

 

TACO SEASONING.

And not just any taco seasoning, chipotle taco seasoning. 

 

I remember when I first had this. All because of my brother, Nick. 

Ever since, its the only taco seasoning we use now. 

And just for some fun, I added fresh jalapenos and fresh parsley to the chicken at the end. 

 

Chicken is such a great ingredient that can be tweaked in many, many ways. 

Use your imagination!

 

and most importantly, have fun with it. Colors are your friends. 

Chipotle Lime Chicken

 

yield: 3-4 servings

prep time: 5 hours 

cook time: 15 minutes

 

 

Ingredients:

  • 1 large chicken breast

  • Juice of 1 lime

  • 1 tsp olive oil

  • 2 Tbs Chipotle Taco Seasoning + 1 Tsp garlic powder

 

Directions:

  1. Take your chicken and place in between two pieces of parchment paper. Using a mallet, pound the chicken breast out until about 1 inch thickness all around.

  2. In a dish or a large plastic baggie, combine the lime juice and olive oil. Mix until well combined.

  3. Place the chicken in the marinade, coating each side, then sprinkle over 1 Tbs of chipotle seasoning mix on each side.

  4. Let marinate for at least 5 hours or overnight.

  5. When ready, preheat your grill pan (to get those nice grill marks, or if in season, preheat your grill)

  6. If using pan, preheat grill pan to medium heat (mine was a cast iron with the grates), once hot add in 2 Tbs oil to ensure chicken doesn’t stick.

  7. Sear the chicken on both sides, about 8-10 minutes on each side until nice and browned. Let rest 10 minutes.

  8. Slice and serve with fresh lime, parsley and jalapenos. 

  9. ENJOY!
