The Ultimate Everything Bagel

What makes it so ultimate?
You reeeeally wanna know??
Let's just say there's 6 cloves of garlic in the dough...
AND...ALL the toppings.
Yep. I put the topping IN the dough too.
Why didn't I think of this sooner?

And. Made 4 jumbo bagels.
How could it get any better?
Wait...i'll tell you.
Growing up with my dad...when he would make me a bagel, he would always use butter and cream cheese.
I always wondered why...
but it just was too damn good.
He forever changed my life. I to this day still continue to mix the two.
Little butta here, little creamda la cream cheese there....
you gotta try it.

Just look at the dump of seasonings.
I packed until I couldn't anymore.
And as much as you see on the top, is totally inside the bagel too.
And then extra packed with fresh garlic.
I unfortunately didn't get a picture of the insides of these babies because my camera died.
And I was totally hungry.
So ...
you know..

The Ultimate Everything Bagel
yield: 4 jumbo bagels
prep time: 2 hours
cook time: 1 minute boil, 20-25 minute bake
Ingredients:
1 packet active dry yeast (2 ¼ tsp)
2 tsp sugar
1 1/3 c warm water (water microwaved 45 seconds)
6 large cloves pressed, through a garlic press
3 ½ c bread flour (start off with 3 and then add a little until dough doesn't stick to bowl anymore)
3 Tbs Sesame Seed
3 Tbs dried Minced Garlic
3 Tbs dried Minced Onion
3 Tbs Poppy Seed
1 Tbs olive oil
Cream cheese (for my homemade version, click here)
Directions:
In a stand mixer, throw in the yeast, sugar and pour over warm water. Let the yeast blossom for about 5 minutes.
Next add in the pressed garlic and 1 Tbs of each seasoning (sesame, minced garlic and onion, poppy seed), turning mixer on low, with dough hook attachment, then add in 1 cup at a time of the bread flour until dough is mixed and doesn't stick to the sides of the bowl.
Pour a bit of olive oil over the dough, not too much, cover with plastic wrap and let rise for 2 hours. The longer the better.
When dough is ready, preheat oven to 425.
Press dough down to release the air and let rest for another 10 minutes.
Cut the dough into 4 equal parts and form into balls.
Place your fingers in flour and press through the center of the ball creating a hole, stretching until the form of a bagel appears. About 1.5 inches in diameter.
Place on a baking sheet lined with just parchment paper, cover with a towel and let rise for another 10 minutes.
Meanwhile, get a large pot of water ready, over medium high heat to a boil. Once boiling turn to medium –low and place 1 bagel in at a time.
Boil 30 seconds per side, using a slotted spoon, then place back onto the parchment lined baking sheet.
Season immediately with the remainder of the everything seasonings.
Once all are seasoned, place in the oven for 20-25 minutes, until bagel is a light golden brown.
Pull out and serve immediately with cream cheese, jam, lox….the list can go on.
ENJOY!
