Two thangs.

TRUFFLE KERFUFFLE is amazeballs.

Ben and Jerry's ice cream that is.

I literally walked into wawa after work to get a gallon of water.....

OK side note - I live on the third floor of an apartment complex...with no elevator. So taking groceries up is like, ok - I don't care if I have to use my teeth to carry a bag, this is a ONE shot deal.

So NO WAY am I bringing up a case of water. A gallon jug will do just fine.

So there's that story,.

But back to my ice cream. It was on the same side as the water so I was like.....why not. It is DELICIOUS. mannnnn.....

Almost as good as this cheese pull.

I'm all about pullin lately, I don't know why but it just gives me such satisfaction.

Cheesy ass strand, topped with the most delicious thing on this planet. Reuben stuffs.

If you don't know me......Reuben's are my weakness.

To the point where they'll be an option at my wedding. HAH.

I don't know where I'd be without corned beef.

Wanna know why it's called corned beef?

"Corned beef is a salt or brine cured cut of beef. Since the origin of the word “corn” comes from an Old English word meaning “large grain,” the term “corned” refers to the large grains of rock salt traditionally used to preserve the beef. These days, corned beef can be made using either a dry rub or wet brine of salt and spices, where it sits for 7-10 days before being boiled and eaten........"

Enough of my talking! Here's this easy recipe!!

Reuben Nachos

yield: depends ;)

prep time: 5 minutes

cook time: 15 minutes


  • Your favorite tortilla chips (I used Cantina)

  • Corned beef, torn (I used 1/4 pound)

  • Swiss Cheese

  • Russian Dressing

  • 2 garlic cloves, pressed

  • 1 cup sauerkraut drained

  • 2 Tbs fresh minced chives


  1. Preheat oven to 400 degrees and line a baking sheet with parchment paper

  2. Make one layer of your chips and top with swiss cheese, corned beef, pressed garlic and sauerkraut.

  3. Repeat this twice more and bake for 15 minutes until cheese is slightly browned and gooey.

  4. Top with russian dressing and chives

  5. ENJOY!!
