Pepperoni Mushroom Pizza

Sup.

 

Been a while. I don't know how many times I've heard "so what happened?" "are you done blogging?" "when are you going to blog again?"

 

And each time I wanted to punch myself in the face.

Literally.

 

So long story short, money got a little tight....I was spending more time with friends and fam.....going on dates.....spending more time on my career.....and food just took a ride in the back seat. 

 

I wanted to live more outside of the cooking and blogging life which was spectacular by the way.

 

But I knew I'd be back. And here I AM. 

Sometimes this stuff happens....keeping up with a blog can be hard! Especially the money part. Food is expensive! Especially trying to come up with crazy recipes. 

But....along this lil side road I tried out different diets and I came across the Keto Diet.

 

Yes. I've also heard "THAT IS SO BAD FOR YOU!" "YOU DON'T NEED TO LOSE WEIGHT" and so on.....

 

But it's what I wanted to make myself feel better and two weeks later I am down 10 pounds. Not going to lie, it was extremely hard at first to adjust to....I mean limited carbs, dude. 

 

How....?

But it's not so bad! Basically the diet is high in fat, medium protein and very very low carb. 

 

Whoda thunk fat doesn't make you fat? Bring on the bacon and butter.

So...I thought I'd add something else different to my blog! Keto Friendly meals! If I am going to be eating this way for a bit why not blog about it?! It's also another chapter to my blog that I'm extremely excited about.

 

Now...back to food.

So....mushrooms. You either love them or you hate them. And I will say I am not a fan....but turning them into pizzas. HELLLLLL-O.

 

Not so bad!! 

This recipe adapted from Ruled.me Ketogenic plan. Comes with a ton of recipes and ideas and the whole idea behind a Keto diet and how it works.

 

The only addition here....tons of garlic. Duh ;)

And you can certainly take away the pepperoni and you have yourself a vegetarian pizza. Or add some peppers and spicy sausage...broccoli....pineapple and ham. You do as you please. But for me-- pepperoni was a must. Considering it has 0 carbs in it. 

 

So this recipe serves 3. So you're cutting the last pizza into thirds. And in each serving it has.....

 

Calories: 430

Fat: 42g

Net Carbs: 4g

Protein: 12g

If you're wondering what exactly I stock up on with this new Keto diet...it's...

 

Bacon

Eggs

Heavy Cream

Chicken

Steak

Hot Dogs

Cheese

Cream Cheese

Mayo

Flax Meal

Almond Flour

Sesame Butter

Almond Butter

Leafy Greens

LOTS of water

 

and that's about the base of it. Mayo. For. Lyfe.

Pepperoni Mushroom Pizza

 

yield: 3

prep time: 5 minutes

cook time: 20 minutes

 

Ingredients:

  • Portobello Mushrooms (4)

  • 1 beefsteak tomato thinly sliced or heirloom if you can!

  • Fresh Mozzarella (however much desired)

  • 2 Tbs pressed or minced garlic

  • Fresh Basil

  • Pepperoni 

  • Olive Oil

 

Directions:

  1. Preheat oven to 400 degrees and prepare baking sheet with parchment.

  2. Clean off your mushrooms using a very very damp paper towel

  3. Scrape out the meat of the shroom...this is optional. 

  4. Lightly oil your shrooms on each side and inside part down on the parchment lined baking sheet...bake for 10 minutes.

  5. Flip and bake another 10 minutes. Check for doneness halfway through some ovens vary.

  6. Place each mushroom on a couple paper towels and place more overtop. Press down gently to collect the extra moisture in the shroom. Mine had a good amount and we don't want watery pizzas!

  7. Now...place the shrooms back on the parchment paper, flesh facing up. 

  8. Top with minced garlic, little mozzarella, thinly sliced tomato, more mozzarella and then pepperoni slices.

  9. Bake until cheese is melty and pepperoni crisped up a bit. 

  10. When done let cool for 5 minutes then top with fresh basil. 

  11. Serve and ENJOY!!!
