Chocolate Almond Butter Cookies

Hello there my friends.
Lets talk cookies.
For me, a thick gooey cookie is where it's at.
Unless of course, it's a chips ahoy. Chips ahoy is life.
But...a healthier cookie? Is this possible?
Yes...and these are keto friendly!


These are super super easy! And only 3 carbs a cookie! wut.
And allllll the proof is in da puddin.

Used a packet of sugar & fat free pudding!
Being on this keto diet...it's hard to find sugar subs, I did do a trial run and used stevia but it was just not the same. The pudding brought all the richness to this cookie and just the right amount of sweetness!

I cooked them just under enough and let them cool and they were extremely fudgy! Almost as if it were a brownie!
And let me tell you - the dough is hard to resist. This maybe could have made 10 cookies but I couldn't help myself!!


The wet ingredients consist of almond butter and egg.
Almond butter though. I'm a HUGE peanut butter fan but when on a keto diet...almond butter is a better option. The only difference is $$$$$$
But totally worth it. I have about 5 jars of almond butter now. My favorite being coconut butter. MMMMMMMM it's FABULOUS.
I did just order some sunflower butter and i'm anxiously waiting to tear into it.

107 calories
8.4 g fat
3.4 g net carbs

Chocolate Almond Butter Cookies
yield: 9
prep time: 5 minutes
cook time: 10 minutes
Ingredients:
4 Tbs melted salted butter
1 Tbs heavy cream
2 Tbs almond butter
2 Tbs almond flour
1 tsp vanilla extract
1/4 tsp baking soda
1 Tbs unsweetened cocoa powder (I used Ghiradelli)
1 egg
1 packet sugar & fat free Chocolate Fudge Pudding
1 Tbs powdered peanut butter (PB2)
Directions:
Preheat oven to 350 degrees and line a baking sheet with parchment paper.
Dump all your ingredients in a bowl and mix until just combined.
Using a 1 inch cookie scoop, scoop the dough and form 9 cookies, they can be close together they do not spread.
Bake for 8-10 minutes and let cool and ENJOY!!!
To add a lil extra sum sum, drizzle some almond butter over the cookies.
