Scones are super easy to make! And these should definately be on your list! The combo of the most amazing flavors....Chocolate, Salt, Oatmeal and Peanut Butter. How could you resisit? The best part about these, in my opinion, is the salt. The final touch that just brought everything together.
Now, scones just sound intimidating...you also do this by hand, no stand mixer needed! So I have this process..step by step, to make it easier.
Here we go!!
Combine all of your dry ingredients in a large bowl and whisk to combine.
Cube your butter into small cubes and throw in your dry ingredients.
Now either with a pastry cutter, fork, or your hands...crumble the butter into the flour mixture. I started to with a fork but it's much harder than you'd think. A pastry cutter is great for this, but I don't have one. So the hands it was! Much easier. Get the butter into small pieces about a pea size or so.
And there you have it! The bits of butter help with flakiness throughout the scones. Now onto the wet ingredients.
Mix the egg, sour cream, vanilla and heavy cream together. (I didn't have buttermilk on hand so I combined sour cream and heavy cream to take it's place. If you have buttercream use 3/4c of it and forget about the sour cream and heavy cream!)
Make a well in your dry ingredients and pour in the wet mixture.
Now stir until almost combined.
Then add in the peanut butter
And mix to combine. You may need to use your hands halfway through this which is totally fine! They're the best mixing tools!
Now add in the chocolate chips and you're done! I rough chopped through some dark chocolate chips to have both small and big chips throughout the scone.
Mix until well combined.
Dump onto your counter and shape into a circular disk, about an inch thick.
Now cut into 8 equal pieces.
Place on a baking sheet lines with parchment paper and bake for 11-14 minutes.
When they are lightly browned and hard on top but a little soft in the middle...take them out. Just feel at them, or use a toothpick to see if done. I don't like super dry scones, these come out super moist.
Now time for the chocolate drizzle! Just melt in microwave.
And drizzle over your scones with a fork! Or dip em! Either works!
Now for the best part! The salt!
Must be kosher salt, I found it worked best. Sprinkle over the wet chocolate as little or as much as you want!

YIELD: 8 Scones
2 c flour
½ c packed light brown sugar
1 tsp baking powder
1 tsp baking soda
Pinch of salt
1 c instant plain oats
¾ stick cold salted butter cut into small cubes
¾ c buttermilk OR ¾ c low-fat sour cream ¼ scant c heavy cream combined
1 tsp vanilla extract
½ c or one big scoop of creamy peanut butter
1 c heaping of roughly chopped dark chocolate chips
¾ c additional dark chocolate chips, microwaved until melted
1 heaping Tbs of kosher salt
Preheat oven to 400 degrees.
Combine first 6 ingredients (all the dry)
Cut in the cold cubed butter with a pastry cutter or fork. Or use your hands as I did and crush into small pea shaped sizes.
In a separate bowl, whisk the buttermilk (or the substitute of sour cream and heavy cream) egg and vanilla.
Make a well in the dry ingredients and pour in the wet.
Stir until almost combined then add in the peanut butter. Mix well. Use your hands if you need to!
Fold in the chocolate chips.
Dump onto counter and form into a disk about an inch thick and cut into 8 equal pieces.
Place on a parchment lined baking sheet and bake for 12-15 minutes. Check with a toothpick for doneness.
Place on a cooling rack when done and drizzle with dark chocolate then sprinkle over the salt.
