Bacon Burger Lettuce Wrap

And I think to myself, what a wonderful burrrrger.   

 

You ever daydream about burgers? You know especially with it being summer and all? Because I do...they are just so versatile. They can be topped with everything on the earth, stuffed with fats like butter and cheese.... you can use different meats as the burger...you can do it all.

 

But this special burger right here...this is my baby.

When I got hooked....it was when I was giving Whole30 a try. I did Whole30 for a WHOLE THIRTY days...and I honestly was super impressed with my results.

 

I felt more energetic, I was wayyy less bloated, I wasn't hungry constantly and in total...I lost 15 pounds! 

 

I then went on vacation and was inhaling all I had gotten rid of in my system of the 30 day "detox" ... sugars, grains, processed foods...dairy..ALCOHOL..and surprisingly I only gained 5 pounds back from the week long binge. I sometimes would like to revisit this "diet" but I just can't part ways with cheese and grains aaaaand wine.

 

But long story short - this was my go to on the diet, on the REG. I had this burger at least 4 times a week.

What makes this burger pop is the compliant spicy mayo I had created.

It was just..compliant mayo mixed with adobo sauce and some spices.

 

And boy.was.it.addicting.

 

And whoda thought for a lettuce bun?? Who?? Because I owe you a huge hug. Buns are great and all but a nice crisp iceberg lettuce cup "bun" is totally where it's at.

 

I need you to love it with me.

 

 

Bacon Burger Lettuce Wrap

 

yield: varies

prep/assembly time: 10 minutes

 

Ingredients:

  • Burger Patties (however many you need)

  • Cooked Crispy Bacon (I use Smithfield)

  • Red Onion Slices

  • Chipotle Mayo or any of your favorite condiments

  • Iceberg Lettuce (whole head)

 

Directions:

  1. For the burgers, you can use premade store bought, frozen or grab a pack of grass fed beef and form your own burgers, whichever is easiest for you! You can use any burger you like - can even be vegetarian, wild boar, turkey...whatever your heart desires.

  2. Char the burgers on grill/stove and cook until desired pinkness and let rest.

  3. Cut up your desired toppings! I cut up some red onion, thinly sliced.

  4. Next take the whole head of iceberg and cut into 4 sections, taking each section - take out the inner layers (they are usually a bit colorless/yellow) you'll want the very outside layers of lettuce to wrap around your burger.

  5. Now assemble. Take your lettuce and place your burger on the bottom half of the layers so the top half can fold over onto the burger, but don't fold yet!

  6. Top with onion, chipotle mayo and bacon, then fold and ENJOY!

 

**Whole30 - make sure to use grass fed beef, sugar free bacon and compliant mayo**
