Chocolate Chip Waffles

Look at that stack, man. {exhales} This is such a great waffle recipe and you wouldn't even know its keto! Yea, I said it. KETO. I have been testing out this way of eating again and so far so good! I do feel better overall, the first two weeks I was such a sleepy head. But now I am on week three and it is becoming easier. 

 

I know the word "Keto" is treacherous to some. I've seen so much back talk to this diet, but hey if it's not for you {pats on the back} it ain't for you! But to some this diet is everything and I am trying to test out different diets so that I can have tasty recipes for you that fits your lifestyle!! 

Now...the waffies....so easy and so simple. You really can't tell that they're not made with real flour and sugar. I also don't know about you but I am a huge circular waffle lover x 1000. I reeeeally love the free shaped ones too. You know, the ones where you add the batter in the center and stop halfway so it does not reach the outer edges and becomes this free form shape? THOSE. I love those. And I blame Bobby Flay for this obsession. I saw him do this once a few years ago on TV and I just fell in love and never looked back. Sadly, this batter was not thick enough to be a free form but hell, it tastes so good the shape doesn't even matter!

Did I mention there was chocolate chips? {hee-hee} And being on Keto, you think it would be very difficult and impossible to still satisfy your chocolate loving self....but....it's NOT. Lily's Chocolate is everything you need and more for your chocolate cravings. Not going to lie, it's damn pricey but worth it. I found a bag of chocolate chips at my local Giant, I believe there are bars too of different sorts, but I was on the mission for choco chips at the time. 

As you know my disgusting love for Mayo, I also dream of Butter. That's another reason why this diet is not so hard to adjust to, there's butter to add, to EVERYTHING. I also bet you are curious for what was drizzled over these waffles? (shout out to my mans for drizzling as I took a shot of these beauts)

 

A waffle can't come to the party and not be dressed in sugary sauce! SO, WALDEN FARMS links up. There are so many different condiments and sauces and sweets made by this brand....I haven't heard the best of reviews for some of their products but their syrup is to die for. There's a big fat ZERO on the label. Maybe made with a bunch of fake things but hey, if its ZERO it's HERO.

 

There are two kinds of Walden syrups, a pancake one and a walnut one ...get....the...walnut....it's 10x more delicious than the pancake, it tastes more syrupy, if that is even a thing?

Keto Chocolate Chip Waffles

 

yield: 8 servings (4 whole waffles)

prep time: 5 minutes

cook time: 5-7 minutes

 

Ingredients:

  • 8 oz (1 brick) Philadelphia Cream Cheese room temp

  • 8 large eggs room temp

  • 2 tsp vanilla extract

  • 1 Tbs swerve (granulated)

  • 2 cups almond flour (I used Anthony's)

  • 2 Tbs Lily's Dark Chocolate Chips (120 morsels if counting LOL you know I did!)

  • Melted Butter/Cooking Spray for waffle iron

  • Butter and Walden Syrup for serving

 

Directions:

  1. Preheat your waffle iron. I used a circular belgium waffle maker

  2. While your waffle iron heats up -in a bowl whisk together the softened cream cheese, eggs and vanilla. You may have small tiny dots of cream cheese within your mixture, it's fine.

  3. Add in the swerve sugar and almond flour and mix until well combined.

  4. When waffle iron is ready, coat in melted butter to prevent sticking, you can also use cooking spray - just make sure it's oiled up!

  5. Add your batter to the iron (mine took about 2 cups of batter) and then sprinkle over a few chocolate chips then close and cook according to whatever waffle iron you are using. I let mine cook for about 5 minutes then checked, some areas got a little darker on one side so I took the waffle out and flipped it, closed it and continued cooking for a few more minutes.

  6. Once done, serve with butter and syrup!

  7. ENJOY!
