I will forever stand behind pineapple on pizza. I don't know what it is, it's just that sharp sweetness paired with saucy-ness and a nice crispy crust and ooey cheese...it..just..fits. It's like a brie and pear flatbread. It..just..FITS. And if you aren't a pineapple pizza person, try this recipe and let me know if it changes your mind ;) Trust me!
Now, this pizza is macro friendly. Low fat, high protein and carb and this pizza is perfect for any leftover chicken you may have! It reminds me of a, throw everything you got in the fridge onto this flatbread" and devour! Kind of pizza.
Speaking of flatbread - it's the best there is. Lavash Bread. You can do absolutely anything you want with it. Make chips, use as a wrap, use as a pizza base, a blanket, to wipe your tears of joy, as roll ups, as taco shells, to take over the world...literally anything. And it's just so damn good. Super subtle in taste and so pliable and so low in carb it's mind blowing. Bread, low carb? What?? There is about 10 net carbs per sheet.
Now onto this marvelous flatbread I just threw on what I knew I loved and with it being summer - BBQ Chicken. If you are a huge NO on the pineapple I would highly suggest some grilled corn in it's place.
The sauces I used are super macro friendly - Sugar Free BBQ Sauce and Bolthouse Farms Ranch Dressing. You won't even be able to tell the difference and it saves on calories. And to add a touch of freshness I added some freshly minced chives. If you don't have chives some red onion would be great too!
Just look at the dreaminess. It's like a work of art. Now lets get cookin!
BBQ Pineapple Chicken Pizza
yield: 1 serving
prep time: 5 minutes
cook time: 6-8 minutes
1 sheet of Lavash Bread
56g (1/2 c) Fat Free Shredded Mozzarella
2 ounces shredded cooked chicken breast
50g fresh chopped pineapple (canned is OK too but check label)
4 Tbs Sugar Free BBQ Sauce (I used G Hughes)
2 Tbs Bolthouse Farms Ranch Dressing
Fresh Chopped Chives for garnish (optional)
Preheat oven to 325 degrees.
On a baking sheet lay on your sheet of Lavash Bread.
Top with fat free mozzarella and shredded cooked chicken.
Bake for about 5 minutes and check to make sure edges aren't burning. Once the edges get a light golden brown and cheese has melted take out and let cool for a minutes or two.
Add on your chopped pineapple.
Drizzle over your BBQ sauce and Ranch. Garnish with chives and cut with a pizza cutter. (I cut mine into 6 pieces)
