Keto Brownies

If you go ahead and imagine the gooiest, chocolate-iest, velvet-iest, melt-in-your mouth, most decadent brownie...here it is. This is freakin IT.

 

This is the absolute best brownie I have ever tasted in my whole entire life & I so sadly wish that these were made from scratch. YEP - THESE ARE BOXED AND I NEED YOU TO KNOW ABOUT THEM. They are so easy to make and they are keto friendly. 1 net carb per square. It's THAT keto friendly. 

So here it is. You can buy these off Amazon! A weeee bit pricey but it's so worth it. Even if I wasn't eating "keto" I would buy this mix. I don't know how they did it, it's like they put magical dust in the mix. I know, I'm obsessing over here, but i'm not lying to you. This is the best brownie of life. 

All this mix needs is a crap ton of butter and eggs. That's it. 

& of course, my little addition....chocolate icing. I melted 2 servings of Lily's chocolate chips with a splash of heavy cream and bam, icing. It doesn't even raise the net carbs of each slice that much...maybe about .2 or so. WIN.

So if you really wanted to...you could "technically" eat the whole entire thing with no guilt. That's if you're strictly counting net carbs ;) 

 

This little treat was a HUGE help with my sweet cravings. Although one little square is a serving, it was so rich and decadent...it did the trick (*snap*) just like that!

lil personal keto update...

I've been on Keto for about..hmm......a little over a month? At first I was loosely tracking. I would only count the net carbs I've eaten and tried staying under about 20 a day. I then realized it wasn't working for me as it did when I first tried, two years ago. I believe it's because I was heavier my first round. But I just listened to my body and tried switching up some things.

 

So...for the last two weeks I've been counting my macros. At first it was very hard (had to cut out alcohol, wahhhhh)- but then it became so much easier. It just like..clicked. 

 

I cut out all alcohol & I added vegetables and fruits in my diet. I desperately needed them. I can't live off cheese and meat, although how lovely does that sound? So I added raspberries, brussel sprouts, flax & spinach (all in moderation) to my diet. It changed everything. And in the last two weeks I was able to lose an additional five pounds. I know most of which is probably water weight, but I felt leaner and just more energized and overall just BETTER. So let's see what this next month brings! I am not going to weigh in for another 4 weeks...I found hiding the scale really helped me mentally day to day. 

Keto Brownies

 

yield: 16 serving

prep time: 5 minutes

cook time: 25-30 minutes

 

Ingredients:

  • 1 bag Keto Brownie Mix 

  • 1 1/2 sticks of butter, melted

  • 3 large eggs beaten

  • 120 morsels (Lily's dark chocolate chips)

  • 1 Tbs heavy cream

 

Directions:

  1. Preheat oven to 350 degrees.

  2. Grease an 8x8 inch dish with butter and line with parchment paper.

  3. In a bowl combine the brownie mix, melted butter and eggs until fully combined.

  4. Pour into the greased/lined 8x8 inch dish and bake for about 25 minutes, I under baked mined just a bit so they would be extra fudgey.

  5. Once done, let cool for 15 minutes.

  6. In the microwave - melt the chocolate chips and heavy cream together in a small bowl. I microwaved 10 seconds at a time, stirring occasionally, so the chocolate would not burn.

  7. Once melted pour over top the brownies, spread evenly, & cut into 16 brownies.

  8. ENJOY!!!
