The cheesecake bars that forever changed my LIFE!
So...here is THE story.
So, I was making these bars for a "reveal party" and BOY WAS I EXCITED! My boyfriend (Tyler)'s - sister (Jackie) is pregnant, having her second child, and this party was for her! Tyler told me about this party 3 weeks in advance, it was to take place this past Friday (Aug 30th) at her house. He told me to pick any dessert that I wanted and of course I pick cheesecake! How can you go wrong?
Jackie and her husband and their little son maxi man moved to the state of Washington not too long ago, so them coming home was huge within itself since we don't get to see them that often. SO, this party was going to be great & I was freakin pumped! Tyler had let me know that there were going to be a lot of pictures for the reveal and to make sure to bring a cute outfit!
Friday comes and 3pm strikes and I clock out! I walk over to Tyler's cube at work (yes we work at the same company!) and he tells me he has to get a few more things done for work before we can leave and for me to start getting ready. So I am putting on my makeup, putting on my dress getting ready and about 20 minutes later I get a text from my coworker "Carly, are you still at work?" "Can you turn off my heater at my desk I forgot to turn it off!!" So at this point I am ready, Tyler is ready and we go to turn off this heater before leaving to go to his sisters.
As we are walking (this is a 1 minute walk) ...I turn to him, he has this smile on his face and I say "You know the sex of the baby don't you?!" and he is smiling.... "TELL ME IT'S TWIN GIRLS" I said... as he continues to smile...
We turn the corner about to get to my coworkers desk where I then see a trail of lights, rose petals and pictures lining the hall.....leading to my old desk. My old desk from where I first met Tyler.
So on this walk my heart is pounding out of my CHEST and I literally CANNOT breathe. My steps feel delayed and my mind is rushing "stop it, is this it? No way this is it...but this feels like IT"
We get to my old desk where a circle of petals lay and our song starts to play - Fly me to the Moon by Frank Sinatra.
I am in tears and I burst out "This is where we first met!!!!" He holds me tight and we slow dance. I didn't want the song to end because I didn't want to let him go.
He steps back once the song has finished and asks "are you ready?" and gets down on one knee.
I have forgotten how to swallow at this point.
He says "Carly, 1055 days ago I met you right here...."
meanwhile I am sweating to death and could not believe the love of my life was about to ask me THE QUESTION. I couldn't even speak I was in such disbelief.
AND HE WHIPS OUT THE RING AND I COULD HAVE SCREAMED YES 100 TIMES ...hugging him, accidentally suffocating his sweet face!!!!
The Ring....boy oh boy...the ring. It was the ring I've always dreamt of!!
As I wipe away the tears my two great girlfriends appear out of nearby cubes, they were taking pictures the WHOLE TIME!!!! I love them so much I am so happy they got to share this special moment with me. Thank you Haley & Ashley <3
As I catch my breath I hear over the loud speaker "Carly, please report to the training room" I look at Tyler with one brow raised and he grabs my hand and off we were!
We take the elevator down to the first floor and he tells me to close my eyes, as he leads the way. He opens up the door and I am rushed with "SURPRISE!!!!!!" confetti hitting me at ALL ANGLES! I look up and its my family, his whole family our friends and coworkers!!!!!!!!!!!! ALL there to share my engagement with us!!!! A big party followed with drinks and food and lots of pictures. It was the best day of my life.
I cannot express enough what this man means to me, and now I get to marry him. And to think... I was making cheesecake bars for my own engagement party!
Oreo Cheesecake Bars
yield: 24 bars
prep time: 10 minutes
cook time: 30 minutes minutes
chill time: 8 hours-overnight
Family Size Oreos (48 oreos)
6 Tbs melted salted butter
4 blocks cream cheese room temp - 32oz (I used Philadelphia)
1 cup granulated sugar
2 tsp vanilla extract
4 large eggs room temp
1 c sour cream (I used breakstones)
Preheat oven to 325 degrees.
Line a 13x9 inch pan with parchment paper, set aside.
In a food processor put in 38 oreos, we are going to save the rest to crush up to put into the cheesecake batter.
Pulse the oreos until they become very fine and then add in the butter and pulse a few more times until well combined. (if you don't have a food processor, stick oreos in a large ziplock bag and crush with a mallet or rolling pin until fine - empty into a bowl and mix in the butter with a spoon.
Pour the oreo mixture into the prepared 13x9 pan and press until you have an even flat layer of oreo crust. Set aside.
In a stand mixer or with a hand mixer, beat together the cream cheese, sugar and vanilla until well combined.
Add in the eggs one by one until well combined after each and then add in the sour cream.
Take your remaining 10 oreos and break them up into pieces, you want them to stay chunky so don't break them up too finely - fold them into the cheesecake batter with a rubber spatula or spoon.
Dump the cheesecake batter into the 13x9 inch pan, over the oreo crust spreading evenly.
Bake for about 30 minutes until sides are somewhat set when you jiggle the pan but the center is still a tad bit jiggly.
Cool to room temperature and then place in the fridge overnight or for 8 hours.
Cut into 24 squares and ENJOY! I drizzled mine with some melted chocolate but that is up to you if you want a little extra sweetness!
