Keto Cinnamon Rolls
Cinnamon rolls are that morning kiss you didn't know you needed. I freakin LOVE cinnamon rolls. I mean, who doesn't? I just recently had cinnamon rolls...like...yesterday. I had gotten the classic go to tubes of course, the ones that used to scare the crap out of you when you peeled it open? But now..they don't ever pop and you gotta smack the end of a counter with it....what ever happened to the peel pop anyway? Am I the only one who has noticed??
But but back to cinnamon roll love - regardless of how you eat them, store bought...dairy free...gluten free...keto-fied....they always come out tasty, they're just one of those treats where you can never make them un-delish.
For this particular recipe - these are keto friendly. I was eating these not too long ago as my weekend morning treats when I was testing out the keto diet again. And..BOY ARE THEY GOOD.
The dough itself was new to me, it's a mix of cheese, cream cheese and almond flour. Weird right? A cheese dough to make cinnamon rolls? YES. You don't even know it's there! It's soo magical. The sugar I used I had to order off of Amazon. I think some grocery stores carry it too - Swerve. It's pretty damn great for mocking sugar. It tastes almost like the real thing!
This recipe will make for 8 big cinnamon rolls. You can also cut them smaller to make 16 mini rolls or cut them bigger into 4 GIANT rolls.

You'll want to bake these until golden browned - just make sure to check on them through the cooking time. The edges may get darker quicker compared to the middle of the rolls. Because we didn't use the normal - flour/yeast - mixture the rolls will not be thick in size. You can certainly put them in a smaller pan to get more of a height but I cooked these just as I would any other cinnamon rolls.
And we can't forget about the best part...the icing. You'll want to let the rolls cool slightly before putting on your cream cheese icing. Otherwise it'll melt and disappear from the heat of the rolls and we don't want that! We want a nice thick layer of love.
I hope you love these just as much as I did! These are a sweet tooth smacker for anyone on the Keto diet and they will not last long in your house...trust me.
Keto Cinnamon Rolls
yield: 8 Cinnamon Rolls
prep time: 20 minutes
cook time: 20-25 minutes
2 c whole milk shredded mozzarella
7 oz cream cheese softened (reserve 3 oz for icing)
1 large egg room temp
3/4 c almond flour (I used Anthony's)
6 Tbs softened salted butter (reserve 1 Tbs for buttering pan)
6 Tbs swerve sweetener - granulated (reserve 2 Tbs for icing)
2 Tbs ground cinnamon
1 tsp vanilla extract
Preheat oven to 350 degrees and butter an oven safe baking dish with 1 Tbs butter. Set aside.
In a microwave safe bowl, melt the shredded mozzarella cheese. about 1-2 minutes.
Take out and mix in 4 oz softened cream cheese. Add in the egg and the almond flour and mix until well combined.
On a sheet of parchment paper, sprinkle over a little extra almond flour to prevent sticking. Dump out your dough, sprinkle a little more almond flour on top and then top with another sheet of parchment paper. This dough gets sticky so using parchment helps to prevent the dough from sticking to any counter surface.
Using a rolling pin (or an empty wine bottle) roll the dough until 1/4 inch thick. If dough starts to stick at all to the parchment, add a little more almond flour.
When the dough is rolled, peel off the top parchment layer and throw away.
Smear 5 Tbs butter onto the dough, sprinkle over 4 Tbs swerve sweetener and 2 Tbs ground cinnamon. see above pictures for reference.
Roll the dough up (see above picture) starting at the bottom, rolling away from you. Cut into 8 equal pieces.
Place the cut cinnamon rolls in the buttered baking dish and bake until golden about 20 minutes. Keep an eye on them so they do not burn!
Meanwhile make the frosting. Whisk together 3 oz softened cream cheese, 2 Tbs swerve and vanilla. Icing will be thick but will melt slightly on the rolls.
When rolls are done, let cool for 5 minutes.
Dollop on the icing onto each roll and smear evenly.
